Roquefort Dressing

Vegetarian

Serves 6–8

The perfect accompaniment to fresh field green.

  • 1 cup nonfat yogurt (plain)
  • 1 cup nonfat cottage cheese
  • 6 tablespoons reduced-fat buttermilk
  • 1/4 cup crumbled roquefort cheese
  • fresh-ground pepper, to taste

In a blender or food processor, blend together yogurt with cottage cheese. Add buttermilk and cheese; process till creamy. Season to taste with fresh-ground pepper.
