Rustic Italian Cooking: A Taste of Northern Italy Milan & Florence with Francesca Giarraffa

Travelers to Italy may be surprised at the diversity of its regional cuisine. We invite you to spend two delicious culinary evenings with our native Italian cooking instructor exploring dishes from northern Italy. Each night a complete rustic Italian meal featuring an entree, side dish and dessert will be prepared and enjoyed together. Week one includes "cotoletta Milanese" (thinly sliced veal cutlet coated with bread crumbs and sauteed, then topped with fresh parsley and lemon juice); wild mushroom risotto (simmered with chicken broth and white wine); a seasonal vegetable or salad; and lemon and green peppercorn sorbet. Week two includes "arista alla Fiorentina" (pork rib roast with garlic and rosemary, topped with an au jus reduction and served with Tuscan white bean ragu); sauteed black kale (in garlic and chilis); and "zuccotto" (a dome shaped sponge cake filled with coffee ice cream, amaretti cookies, marsala wine and walnuts). The class is primarily demonstration format. This class is held in the Cooking and Lifestyles Classroom at Whole Foods Market, 3135 Washtenaw Ave., in Ann Arbor.
