Welcome to our Salud Cooking School!

Your Host!  Chef Joy

Joy is a graduate of New York Restaurant School, HB Actors Studio and has been passionate performer and cook since the age of thirteen...  She comes to us from the Big Apple (New York City) where she ran her own children's theater company for over fifteen years, performing at over 200 schools, libraries and museums each year. Because her true passion has always been food, each summer, Joy stayed busy working for high end catering companies and fast paced restaurants!  Learning new tricks and recipes with each job, she has combined her passions into a fabulous repertoire that speaks to all ages and interests.  Among many accomplishments; Joy has made 500 sandwiches in 3 hours, managed a café for toddlers, been a featured chef at Microsoft parties and ran the catering for NYU's accelerated MBA program.  Joy worked on NBC's Saturday Night Live and is a published food writer and photographer.  Her favorite review comes from Brian Larkin, Age 8:  "No wonder they call you Joy, you make everybody happy."

    1:00pm-3:00pm in Salud! $5

    Drop in and sample up to five wines for $5.  Wine is chosen by our wine experts.  Paired with delicious food from our catering and specialty departments!

    SUNDAY COFFEE Tasting

    9-10am in Salud! FREE

    Drop in and enjoy coffee like a pro.  Just like our wine tasting, a Different Roaster and Beans will be featured each week. You'll be sniffing, slurping, swallowing and learning how to evaluate coffee's fragrance, aroma, taste, nose, aftertaste and body.  Say "Good morning!" with us every Sunday this fall!

    Singles Happy Hour

    5:30-7:00pm in Salud! $1

    Once a month Salud! is the spot for singles.  For just $1 you get a 2 ounce wine tasting and gourmet nibbles.  Bring a friend and meet a new friend.   Each week, Chef Joy will entice you to try a new taste, a different ingredient or demonstrate a quick cooking technique. Bring a few singles and a few singles$ for a happy hour.

    Bring Home the Bacon with Mark Neumann

    6 to 8pm in Salud! $40

    Our favorite Butcher is at it again, this time with the most beloved food on earth... Bacon.  Crispy, salty, smoky, sweet - who can resist Bacon?!  Join Mark and Chef Joy as we learn the about the history of bacon and how it is cured.  We'll explore Pancetta, Salt Pork and Fatback too.  Included on the menu, Bacon Wrapped Dates, Smothered Bacon BBQ Chicken, Tomato Bacon Hash, Pancetta Orange Salad with Cotija, Biscuit Gravy with Bacon Fat and Canadian Bacon Maple Custard.   We'll be makin' Bacon all night long.  Wine and Beer... this class is sizzling so sign up fast.

    Wine with Food Time: Italy

    7 to 8:30pm in Salud! $20

    Matthew McKinnon, our Whole Foods wine guru, takes you to Italy! From Sangiovese to Trebbiano, navigating the wine shop shelves to find an Italian wine that will complement a Friday night lasagna can be a fun-filled experience - if you are armed with a little Italian wine knowledge. This is a great class for beginners and a valuable class for advanced oenophiles too.  Matthew's laid back yet sophisticated style will guide you through a blind tasting then encourage you to discover food pairings for each wine.  Must pre-register.  A light bite night, not a full meal.

    One for the cook and one for the pot?  Tonight Chef Joy will cook up a few of her one pot wonders without getting sauced.  Perfect meals for Cold Weather entertaining and make ahead celebrations.  On the Menu with Salads and Wine:

    SPECIAL FOOD AND WINE EVENT Big Night: An Italian Sunday Supper

    There is nothing like the ritual of sitting down to an Italian table.  The food is twice blessed, once by the cooks and once by the eaters.  During a Sunday dinner, dreams are dreamed, life decisions are discussed and love can blossom.  There is alwys a place for a guest to join the table.  Be our guest tonight. Chef Joy and Matthew McKinnon, our in vino veritas wine guy, say to you, Mangia! Mangia!

    Erin Go Bragh... One Day Early

    6-8pm in Salud! $35

    Ireland Forever!  That's what we all say on St. Patrick's Day.  Celebrate in Salud! with Chef Joy and a few of Whole Foods Market's Irish team members.  Richie from the meat Department will do an Irish Jig and set some Corned Beef in Beer a-bubblin'.  Mattie McKinnon, from the wine department will show us how to make Black and Tans.  He says that French Fries with Curry Gravy is real Pub food.  We'll try that and more.  We'll search for shamrocks in the salad greens and cook and feast the Irish way.  If leprechauns truly exist, they'll be joining us for this class.

    Girls Night Out: Spice up Your Life

    6-8pm in Salud! $35

    No Herbs tonight, just spice girls.  There was a time when spices were so precious that they were kept in locked boxes.  Tonight we'll unlock exotic flavors and use spices in new ways. Wine will be served, dancing is allowed. On the Menu:

    • Curried Pear Salad
    • 5 Spice Beef Tenderloin
    • Fusilli with Mushrooms and Nutmeg
    • Cardamom Cake with Cinnamon Chocolate Frosting

    Vegetarian Comfort Food (Vegan)

    6 to 8pm in Salud! $25

    March may come roaring in like a Lion but tonight we'll sooth the savage beast with a menu designed to make him feel cozy and ready to give up his carnivorous ways. Corn Braised in Coconut Milk with Green Chilies, Caribbean Black Bean Soup, Build a Spud Sweet Potato Bar with 15 toppers, Blackberry Margarita Cobbler.    Doesn't that make your eyes light up and your tummy say "Howdy!"  Comfort wines too. All Vegan recipes.

    Creole & Cajun Cookin'

    Let the goods times roll tonight as we kick back and make some gumbo yaya.  How spicy do we like it?  We'll have to take a vote while we pout Beer and Wine.  On the Menu:

    Opa! Greek cooking is simple, friendly, elegant, and healthy. It reflects the bounty of the Mediterranean as well as the diverse cultures that have made Greece their home throughout the centuries. Too often we eat Greek food from plastic containers, let's change that tonight. There are so many great foods and recipes where shall we start?  Let's start here, with wine pairings:

    • Homemade Hummus and Tzatziki
    • Prawns with Orange Juice Brandy and Oregano
    • Avgolemona, Greek Orzo, Lemon and Chicken Soup
    • Lamb Chops with Thyme, Honey and Mint

    Lunch & Learn: Egg-cellent!

    12noon to 1pm in Salud! $15

    Eggs are magic.  They leaven, bind, thicken and enrich other ingredients.  They taste good boiled, scrambled, poached, boiled, baked and fried.  They are perfect for breakfast, lunch and dinner. They are the perfect class for a Lunch and Learn hour.  We'll use up your extra Easter Eggs!  On the menu:

    • Tortilla Breakfast Soup
    • Georgia Cracker Salad with Country Ham

    Spring Time in Salud!

    6 to 8pm in Salud! $35

    What are the flavors of spring?  Tonight Chef Joy and Specialty team member Ned White will answer that question with a 5 course meal.  They'll fill a market basket with the ripest and the freshest the store has to offer.  Lamb with Rhubarb Chutney, Wild Rice and Ricotta Fritters, and Lemon Mousse hint at the dishes that might appear.  If you know Ned, then you know there will be plenty of springtime cheeses too.  Ned and Chef Joy are both raconteurs and foodies.  Tonight they'll be at their best, enjoying each other's styles.  Expect laughter, learning and lively food with wine pairings.  Don't miss this class.

    Wine Time with Matthew McKinnon: Tour de France

    The French take their wine quite seriously. An impressive wine list can be frightening to a novice wine drinker.  Tonight Matthew will break it down and take your taste buds on a tour of grand crus and vins ordinaries.     An Excellent Seafood Adventure: East vs. West

    6pm to 8pm in Salud! $40

    Two of Bellevue's Whole Foods Market Fish Mongers are also two wonderful seafood cooks.  But their styles are so different.  Charles Julian hails from Texas and puts a Wild West-Mex spin on his fish.  Ted Warren calls his cuisine Asian-Island Fusion.  His Hawaiian upbringing colors his cuisine.  We'll give 'em each the same fish and shell fish then let the battle begin.  With Chef Joy moderating, adding side dishes and pouring wine, the race is on.  The winners?  Everyone who signs up for this class!

    Indian Grill

    6 to 8pm in Salud! $35

    Tonight we take our inspiration from the exotic and fragrant flavors of Indian cuisine.  Cumin, coriander, cardamom, mustard seeds, tamarind... won't it be exciting to incorporate these tastes into your next Barbeque!  We'll also learn how to pair wines with this intriguing cuisine.    On the menu:

    • Mango Raita / Carrot Coconut Salad
    • Braised Corn in Green Chutney
    • Tandoori Chicken Kebabs

    Special Spanish Wine and Food Event: Feria de Abril

    6 to 8pm in Salud! $40

    The April Fair is Seville's week long party of the year. Just strolling along the walks of the fair village is an experience. You meet carriages pulled by noble Andalusian horses, parades with riders in their traditional costumes and women wearing gipsy style flamenco dresses.  The walls are surfaced with a special yellow soil called Albero and lined by more than a thousand stalls where the Sevillans practically live during the fair, meeting their relatives and invited guests, enjoying the food, drink and dancing.  Can we do that in Salud?  Not quite, but we promise you a party.  Matthew McKinnon will be pouring Spanish wine and telling us stories about his week at the fair.  Chef Joy will serve up Spanish Tapas and maybe she'll dance the flamingo?!  On the menu:

    Special Wine Event: Sherry Baby

    6 to 8pm in Salud! $35

    The first documented mention of Sherry comes from 1 BC, it's a taste that goes back thousands of years.  Here in Bellevue, we've forgotten how wonderful a crisp, dry, nutty and tangy, Fino Sherry tastes as an aperitif.  Have you ever poured Pedro Ximénez Crème sherry over Vanilla Ice cream for dessert?  Why aren't we drinking Sherry? Critics have written that it's the world's most neglected wine treasure.   Tonight, with the help of wine buyer, Stephen Carroll we bring Sherry back. You will discover that it is really really good.  Evening will include, Garlic Prawns, Onion Soup with Gruyere, Honeyed Fig and Roquefort Salad with Sherry Vinaigrette,  Roasted Pork Loin with Apple Chutney, home churned Vanilla Mascarpone Ice-cream.  She - e - e-e-e-e-ry baby, can you come out tonight?

The success and popularity of Oregon's 250 wineries are on the menu tonight.  Matthew has also decided to focus on wines that personify Spring and Summer.  A great class for beginners and a valuable class for advanced oenophiles.  Matthew's ability to teach and entertain makes for a delightful evening.  He will guide you through a blind tasting then encourage you to discover food pairings for each wine.     I love Paris, why, oh why do I love Paris?  Nate King Cole sings it, tonight we'll cook it.  The Salud! kitchen turns into a Bistro with simple and lusty food.

    French wine will be served, of course. Eat, learn and enjoy life tonight at Chez Joie... Oo-La-La!

    Welcome guests to your Hacienda for a fuss-free fast Fiesta!  Senorita Joy will show you party ideas for a buffet based on Mexican cuisine.  Seafood Ceviche, Chicken Mole, Shredded Pork in Green Chili Sauce, Drunken Beans, Cocoa Flan and Salsa, Salsa, Salsa... hot, spicy and sweet.  Sangria and Beer...South of the Border Cheer...     Date Night: Cooking with Garlic

    6 to 8pm in Salud! $35

    GARLIC is the subject of tonight's class.  In 1918 Henri Leclerc, a French writer scorned Garlic by calling it rose puante, the stinking rose.  In our kitchen we call it one of the most important seasoning in the kitchen. Slow roasted it can be sweet, chopped or smashed garlic is sharp and assertive.  Follow your nose to this class as we explore and enjoy Garlic.  Full meal with wine.  Can we handle Garlic Ice Cream for dessert?  On the Menu:

    • Garlic Simmered in Oil and Vinegar
    • 40 Cloves of Garlic Chicken
    • Basil Custard
    • Seafood Chowder

    11am-3pm FREE

    Seattle's Humane Society mobile pet adoption center the Max Mobile, visits our store every last Sunday of the month.  A safe and easy way to adopt pets right here at Whole Foods Bellevue!

Please contact Customer Service at 425.462.1400 ext. 0 and ask to register for a class in Salud! or click on the register now link which will direct you to acteva.com, our online sign-up service.  Register Now!

Sold Out Classes
To be added to the waiting list for a sold out class, call 425.462.1400 ext. 0 and specify the class, date and number of students to be added to the waiting list.

Cancellations
To cancel a class please contact Customer Service at 425.462.1400 ext. 0. Seven days notice is appreciated, but a full refund will be credited if you cancel within 48 hours prior to the day of the class. Any cancellations within 24 hours of the class or faxed into the store will not be honored.

If a class has an insufficient number of participants, it will be canceled 24 hours prior to the start of the class. Salud! Coordinator will contact you by phone regarding the cancellation. You will receive a full credit or refund for the class.
