Welcome to the Fromagerie
Our Fromagerie is a temperature and humidity controlled walk-in cheese "cave" designed to mature and maintain cheese at optimal ripeness and deliciousness. Styled after the petite, refrigerated shops of France, our Fromagerie allows customers to "interact" with the cheese. As the environment in the room is controlled; the cheese can sit out in plain view, without the artificial divide of a counter or glass getting in the way. This allows our customers to see, smell, and, with the help of our knowledgeable Team Members, select the cheese that is just right for them.
The room represents the collaboration of cheese makers and affineurs from around the world, including Herve Mons, Neal's Yard Dairy, Luigi Guffanti, Rolf Beeler, and more. We feature an assortment of the world's best cheeses, from traditional European varieties like Montgomery's Cheddar and Hervé Mons Camembert, to innovative American cheeses like Jasper Hill Constant Bliss and Uplands Pleasant Ridge.
Whole Foods Market Bowery is the only Whole Foods Market in the United States that boasts a Fromagerie.

Fromagerie Vocabulary:
Affinage: The craft of aging and maturing cheeses, to help them achieve peak ripeness.
Artisanal: Cheeses produced by a skilled craftsperson, usually by hand and in limited quantities, using high quality ingredients and traditional methods. Whenever possible, these cheeses will be unpasteurized, which must aged be 60 days or more.
