Class and Registration Information
Whole Foods Market offers classes for your benefit. The information presented represents the views of the lecturer and may or may not reflect the views of Whole Foods Market. As always, you should decide what is appropriate for you and your lifestyle.
Cancellations
If you need to cancel attending a class, please contact customer service at 913.652.9633. If canceling a class involving fees, a class credit will be given if you cancel within 48 hours prior to the day of the class. Whole Foods Market has the right to cancel classes due to insufficient enrollment or instructor illness. Whole Foods will contact you by phone regarding a cancellation. Whole Foods closes the registration into classes 48 hours prior to the start of class, so register early. Walk-in registrations MAY BE EXCEPTED ONLY with approval from the course instructor or the Cooking Studio Director, Rebecca Miller. Questions? Superhero Instructors: Emma Marshall and Anna Mason are the cheese specialists at Whole Foods Market. Neil Witte is the Field Quality Manager at Boulevard Brewing, a former brewer, and certified Cicerone (beer guru).
Beer and cheese pack a one-two punch of fabulous flavor. Learn to pair this dynamic duo and discover why they are so well-matched. Your questions are welcome in this interactive, hands-on class. Menu: Sample a wide variety of cheeses, including local favorites, and beers from the Boulevard Brewing Company.

You will stay cozy for the remainder of the winter season with Paige's warming and delicious soup recipes! with Chef Joe Shirley, executive chef at the Federal Reserve Bank of Kansas City
Take your sushi skills to the next level in part two of Chef Joe's sushi series. Learn more about this culinary art form. Includes; basic fish butchery,signature sushi rolls, side dishes, and shopping tips. Menu: Miso soup, Edamame, "Super OK" Roll, Texas Roll, Las Vegas Roll, Salmon, Hamachi and jasmine green tea.

Living Gluten Free and Dairy Free: The Basics

Learn about the different flours used in gluten free baking, what you need to add to get that "gluten" feel, how to combine many different flours for many different tastes. Go beyond rice and soy for your dairy alternatives. Menu: taste many dairy free alternatives and make our own "cream cheese" and almond milk.
Instructor Bio: a retired corporate trainer and overwhelmed mother of a child with food allergies. Cassie researched her sons special dietary needs, and found her inner baker! Scratch cooking is now a necessity, the "norm" for Cassie and her family of five! With enthusiasm and compassion, Cassie now helps others with their new and complicated Special Dietary needs!

Cooking Thai food at home is easy! Take your tastebuds on a journey to learn a few of the most popular menu items in Thailand. Incorporating more plant-based foods and anti-inflammatory spices into your diet can help you to optimize your health. Menu: Fresh Spring Rolls with Thai Peanut Sauce, Coconut Lemongrass & Ginger Soup, and Tofu Pad Thai. These recipes are gluten-free, dairy-free, and vegetarian friendly.

Lisa Markley is the registered dietitian and culinary nutritionist for the Program in Integrative Medicine at the University of Kansas Medical Center. She obtained a master's degree in Whole Foods Nutrition from Bastyr University where she learned to adopt a holistic, "food as medicine" approach to health and healing. She enjoys teaching regular cooking classes to translate healthy eating into tangible, practical habits. She also provides one-on-one nutritional counseling.

Instructor Bio
Jody Krukowski is a board-licensed Naturopathic Doctor and a graduate of the Southwest College of Naturopathic Medicine in Phoenix, Arizona. As a Naturopath, Dr. Krukowski is trained as a primary care physician with an emphasis in natural therapeutics including, but not limited to, botanical medicine, homeopathy, acupuncture, nutritional counseling, neurotransmitter balancing, and disease prevention. Dr. Krukowski has an extensive background in mental health and is an active member of the American Association of Naturopathic Physicians. She maintains a private practice in the Crossroads District of Downtown Kansas City.
Amy E. Roberts is a certified Holistic Nutrition Coach and a graduate of the Midwest Institute of Natural Healing in Kansas City, Missouri. She has a passion for educating others about the healing benefits of eating according to their individuality and to make healthier decisions regarding nutrition, lifestyle and products for everyday living. She provides one on one counseling as well as group classes. Currently, she is a member of the American Association of Drugless Practitioners and is pursuing a Masters in Holistic Nutrition from Clayton College of Natural Health.

We are pleased to welcome back two of Kansas City's finest chefs, Nancy Stark and Paige Vandegrift, to another Dinner at the Studio! (For the uninitiated, our Dinners at The Studio are fine dining, culinary education and entertainment rolled into one great evening...prepare to be delighted!) To chase away your winter blahs this dynamic duo, who have become so well known for their delicious cuisine and attention to detail, will take you on a trip to sunny Spain. They will start with some Tapas-inspired appetizers and follow with a light, delicious Salad of Butter Lettuce and Herbs with Meyer Lemon Vinaigrette and Shaved Pecorino. The main course will be one of the classics of Spanish cuisine, a grand Paella of Seafood, Chicken, and Chorizo with aromatic Saffron Rice. We'll finish with a silky, orange-scented Crema Catalana (a cousin of Creme Brulee) with a Citrus Compote and some buttery Spanish cookies.

Grab your fork and let Enrico Bongiovanni and Joe Riccomini be your tour guides, through the rustic country side of all 20 regions in Italy! On the last Friday evening of every month, you will discover the variety of foods, culture, and customs that each region has to offer. Every dish and product will come to life, as learn about each regions unique history! Then enjoy a sampling of delicious Italian food, served one course at a time, just the way they do in Italy!
This month Joe and Enrico, two Italian wonders from our Prepared Foods Department, are taking you to TOSCANA!
Tuscany, one of the most beautiful regions in the world! Sit down and enjoy simple Tuscan foods from a delizioso antipasto to a magnifico dolce, one dish at the time, while you travel to Florence. Admire the art and architecture of the Renaissance period and walk through the olive gardens that give us one of the world's finest olive oils! Menu: Antipasto: Crostini ai fegatini, e pomodorini ( chicken liver crostini and tomatoes); Primo: Zuppa di funghi alla Lucchese ( Lucca style mushroom soup); Secondo: Bistecca Fiorentina con crema d'aglio (Fiorentina sirloin steak with garlic sauce) and finally Dolce: Cantuccini e caffe' espresso ( Biscotti Cantuccini with espresso cofee).
