My favorite "non-traditional" sauce is a take on Cincinnati Chili. My dad makes an amazing copycat version that tastes amazing on pasta!

My favorite nontraditional pasta sauce is from a recipe I got from Everyday Food magazine. My husband had just gotten out of the hospital from head injury that he had gotten from a falling off a ladder onto the driveway. He was in a lot of pain and wanted comfort food: Pasta--Lots of pasta! Some of the several I made that summer, this was my favorite. It was cauliflower sautéed in butter and sage leaves. I love how the sage leaves got a bit crispy. It's very very yummy- and quick.

I like to add all international flavors to pasta like Greek(olives,feta,spinach), Polish (kilbasa.kraut,mustard), French (oysters, creme freshe,white wine), Mexican (salsa, cheese,cilanto), you get the idea. With fresh and varied food, it doesn't take much!

My non traditional sauce starts with a good pesto sauce, a squeeze of lemon, dash of fresh ground pepper, one a really good cheese tortillinis, fabulois i would love to try the pumpkin sauce, sound really really good.

I'm obsessed with nutritional yeast and truffle oil - alone or together so I love making the nutritional yeast the main ingredient to the sauce. Recently I just tried after hearing about it from a customer, making drunken noodles. I poured leftover wine into the boiling spinach pasta. You don't really need a sauce, but I sauteed more red wine with garlic, oniona, & mushrooms and added that to the drunken noodles with some garlic olive oil and parmesean reggiano (and/or nutritional yeast.) Yum!

In this heavily Italian city of Middletown, ct. many people make a spaghetti sauce from either frozen Maryland blue crabs or fresh crabs when they catch them. Awesome sauce and very easy to make.

My favorite non-traditional pasta sauce is a sage and walnut pesto made with purple sage from my own garden. It goes great on quinoa pasta with sauteed mushrooms, red onions and quorn chick'n tenders.

Though tomatos are pretty traditional, I consider my raw tomato sauce to be non traditional. When my garden is at it's heigh and I can use fresh garlic, chopped homegrown raw tomoatos and homegrown basil (don't forget good evoo and some fresh mozzerla di buffalo) it tastes like my garden has exploded in my mouth. Heavenly.

I cook down broccoli with garlic and oilive oil. Cook it down until it becomes almost mashed and mix with pasta. It's so light and full of flavor!

I like "beans and greens" with pasta: toss some cooked beans (your choice) and cooked, chopped greens (spinach, kale, chard, whatever) into a skillet with EVOO, garlic and red pepper flakes, heat everything up and combine with cooked pasta....yum!

Mmmm...mmmm...mmmm...what else can I say? I am always looking for more ways to make veggies more appealing to my kids! Sauces like this are a great alternative to butter and olive oil to make veggies more appetizing for my 3 and 12 year old! A case of this would last us a year and be a great help! I imagine cooking whole wheat pasta with some broccoli, a little chicken and some snow peas, covered in this sauce!! YUM!

Well, I got a great deal on jalapenos at the farmers market, so made a cheesy jalapeno sauce on meat stuffed ravioli, kinda the same taste as a popper.

i love the taste of pumpkin so this sounds yummy. in the summer i make it up as i go saute garlic with evoo and butter, summer veggies, then add white wine, chicken broth and red pepper flakes toss with pasta and shaved parm. winter i do brown butter sage with squash ravioli and add pumpkin sauce

We went to Italy in October this year and had some wonderful pasta sauces. One was basil pesto with tomatoes and another was a cream sauce with prosciutto and peas. Yum!
