Eat This When It’s Too Hot to Turn On the Stove

I don’t know about you, but the summer heat definitely inspires me to find cooler things to eat. Anything to keep me out of a hot kitchen! Here are a few of our favorite no-cook meals.

One of my favorite summertime quick sandwiches is Monterey Jack cheese, fresh tomatoe and avocado slices on fresh whole wheat bread. Unfortunately, it seems that my local store can no get Organic Valley Monterey Jack cheese. They have tried on several occasions to order but all they get is the reduced fat Monterey Jack cheese. Can someone explain why Whole Foods has made this change?

I love to make fresh mozzarella on french bread slice of tomato balsamic vinegar and fresh basil and salt and pepper to taste!

@BJ - Sorry to hear that you were unable to find this cheese. It appears that Organic Valley still makes this option. Were you able to ask the store why they are no longer carrying it? Buying is done at the store/regional level so they would be the best point of contact. They should still be able to special order this for you.

Here's a a receipe for a great no-cook lunch of dinner for the summer: Arugula, Watermelon and Feta Cheese Salad 1/4 Watermelon 8 tio12 ozs. Arugula 3 ozs, Feta Cheese Take the watermelon and feta cheese and cut into small chunks then add the arugula. Put in bowl and pour the Lime Dressing over it. Lime dressing: The juice of half a lime 2 to 3 Tbls. of Olive Oil a bit of sea salt (not too much because the Feta is usually very salty) Pepper (to suit) Whisk these ingredients together. Then pour over salad and enjoy!

@LINDA - We do not specifically have a way to search for Paleo recipes. Some of the recipes mentioned above would be Paleo or you can try to omit the beans in the other recipes.
