It’s Leap Day! Which means it’s a very special day and that it’s almost March (i.e. almost Springtime!), so you need a special recipe. Enter Fresh Strawberry Cupcakes opens in a new tab. These cupcakes combine some of my favorite ingredients for baking — whole wheat pastry flour, buttermilk and strawberries — plus they aren’t too sweet, which is definitely my style. In addition to the bright pink glaze, the cupcakes themselves are pink thanks to a puréed fresh berries and scoop of strawberry yogurt. I also love that this recipe makes 18 cupcakes, so there are plenty for sharing.
