Favorite New Recipes: Sheet Pan Suppers

As a classically trained chef with a political science degree, Food Editor Molly Siegler puts her culinary chops to work coordinating the creation and curation of recipes and other food-focused content for Whole Foods Market. (Catch Molly’s cooking videos on YouTube!) We asked Molly to share some of her favorite new recipes coming out of our test kitchen.

Dinner has to meet a few criteria this time of year to be invited to the table. It has to be super simple to prepare, relatively quick-cooking and something that everyone will love. If clean up can be a breeze, too, then you might as well be making the perfect meal! My favorite solution is to pop everything on one tray and pat myself on the back. Sheet pan suppers are the ultimate back-to-routine meal, and here are a few of my favorite combos:

Sheet Pan Supper Cod Potatoes

Sheet Pan Supper: Cod and Potatoes

Cod is the perfect fish for roasting as it stands up well to high heat. I am loving it lately for its versatility and wonderful mild flavor — and it’s flaky but meaty at the same time. Miniature, multi-colored potatoes are quick cooking and really fun for kids, too.

Mini Turkey Meatloaf and Green Beans Sheet Pan Supper

Tiny meatloaf for the win! This is such a fast and simple way to make individual portions for everyone in the family, and a swipe of barbecue sauce gives this variation a sweet, smoky flavor. The combination of maple syrup and roasted green beans make for a very cool side dish.

Sheet Pan Fajitas

Strips of peppers, onions and chicken can be tossed in a quick seasoning mixture and roasted for the world’s easiest fajita party. This technique works for your protein of choice — chicken, pork tenderloin or flank steaks are great, but try chunks of steamed tempeh or smoked tofu, too. I also love the restaurant-style technique of popping the foil-wrapped tortillas in the oven for a bit to warm up.
