Make the Most of Mangoes

Baked Salmon with Warm Mango Salsa

Baked Salmon with Warm Mango Salsa

Mango season in Hawaii would always inspire me and my friends to throw a tropical mango party. Have you ever been to a party like that? It’s quite a lot of fun and a great way to celebrate delicious, decadent mangoes. We would put on our swimsuits and sit in a hot tub eating sliced mangoes, drinking sparkling wine and listening to our favorite island music. I wish we had known about party-perfect Mango Sake Sling and Mango Mimosas back then.

New to mangoes? Once you’ve tasted a sweet, succulent mango, there’s no going back. If you’re not sure how to cut it, here’s one easy method:

  1. Slice off the two cheeks on either side of the flat, oblong mango pit.
  2. Taking care not to cut through the skin, make vertical lines about 1/4 inch apart.
  3. Scoop out slices with a large spoon.

Now you’re ready for these “mango-licious” ideas!

  • Add diced mangoes to hot or cold cereal.
  • Make bread or muffins with chopped fresh or dried mangoes. Try spiced Pumpkin Chai Bread for breakfast or a snack with a cup of coffee or tea. Mango Tea Bread is flavored with fresh and dried mango and banana.
  • Make a tropical fruit salad with mangoes, bananas, guava, pineapple, papaya and kiwi.
  • Avocado Mango Salsa spooned over grilled fish or shrimp, or over pork chops or grilled tofu or tempeh is luscious. Baked Salmon with Warm Mango Salsa is amazingly simple too.
  • Spoon chopped mangoes over pancakes or waffles.
  • Enjoy mango smoothies for breakfast or a snack. Vegan Mango Lassi is made with cardamom and coconut milk. Or try this Triple Mango Smoothie, which features diced mangoes, mango nectar and mango sorbet.
  • Top veggies and rice with chopped mangoes for lunch or dinner.

  • For a tasty leafy green salad, top with sliced mangoes and roasted macadamia nuts.
  • Celebrate mangoes with island-style recipes like Mango Crab Sushi and Mango Miso Tofu Salad.
  • Mango Butter is simple to make and tastes great on toast, biscuits and muffins, or spooned over hot cereal.
  • Grilled Shrimp and Mango Skewers make a quick weeknight meal. Serve with hot crusty bread or steamed rice.
  • Curried Chicken with Mango is a favorite served with basmati rice and baby spinach salad.
