Veggies in Sweets

Adding vegetables to baked goods, sweet breakfasts and desserts is a lot easier than you might think, and the results are delicious. What a wonderful way to get veggies into your meal!

A good plan for healthy eating always includes plenty of vegetables. You likely add an assortment of vegetables to salads, soups, entrées, appetizers, snacks and possibly savory breakfasts, but what about baked goods, sweet breakfasts and desserts? It’s a lot easier than you might think, and the results are delicious. What a wonderful way to get those veggies in! 

While not every vegetable is ideal for adding to sweets (okra comes to mind), there are plenty that do quite well.   • Carrots, parsnips and rutabaga

  • Zucchini and yellow squash including other varieties of summer squash

  • Butternut squash, pumpkin, and other winter squash

  • Rhubarb

  • Corn (actually a grain)

  • Sweet potatoes and yams

  • Beets

  • Spinach
