My favorite healthy snack is granola and frozen berries with a generous helping of soy milk drizzled on top. The soy milk and frozen berry combination instantly turns into an icy, very cold texture and tastes like ice cream. Definitely a healthy and delicious treat on a summer day!

My kids LOVE yogurt parfaits after school. Stir together a little 365 Organic Vanilla Non-Fat Yogurt and any non-fat plain greek yogurt, mix well. Sprinkle with half a sliced banana (or any fresh fruit that's in season, or even thawed unsweetened frozen fruit) and the French Vanilla Granola you find in the bulk bins. It's so filling they don't eat again until dinner. Plus I can control the sugar, unlike those fast-food parfaits!

I have a great little serving dish with three compartments; I fill two with two different veggies (baby cut carrots, cucumber slices, celery sticks, jicama strips, etc.) and the last with organic pretzel sticks. My boys always eat every last morsel! I'm looking forward to the day when they'll start eating some hummus; they just aren't on that bandwagon with me yet. :)

Whenever I eat dark leafy greens, I usually separate the leaf from the stem. So instead of throwing away the stem, I use them in my dips! From hummus to salsa, using the stems is much healthier than using chips or crackers! I also try to eat a handful of raw nuts and seeds with granola to satisfy my "crunchy" cravings. Sometimes I'll even add bits of dark chocolate to satisfy my chocolate addiction :)

I don't snack most of the time, but on those occasions when I really need a quick bite, I eat a couple of handfulls of fruit and nut trail mix. It satisfies without added fat and sugar.

As a college student I have to find a way to make the most out of what's available in my dining hall. My favorite snack is to toast a slice of whole grain toast, then spread some peanut butter onto it. I then top the bread with granola and thinly sliced bananas, and on the best days, a little drizzle of honey. It keeps me going during my sports seasons, classes - wherever!

Cannot beat ants in a log. You can do it many ways: - Classic: celery with ANY nut butter and Raisins - Twists: Use a carrot, pretzel stick or dried grit strips as logs and dried cranberries, cherries, or nuts as ants! No utensils required to eat. And kids will love being a part of making them. Which is important in raising healthy eaters and little cooks!

Amy says …
