Simple Summer Sandwiches

Whether it’s grown-up grilled cheese, halvies for your half-pints or picnic perfect pita pockets, mastering sandwich-making is a must if you want to keep meals simple but flavorful this summer. This is the time to incorporate seasonal stars like strawberries, cucumbers from the garden and grilling greats like summer squash, portabello mushrooms and swordfish.

My favorite sandwich is a BLT: 2 slices of whole wheat bread (toasted) strips of maple wood bacon slices of farm fresh tomatoes crisp lettuce mayonnaise (Slices of avocado or mozzarella can be added) Enjoy !

A spinach wrap with dijon mustard, garlic aoili, and a touch of sriracha spread on it. Top with alfalfa sprouts, a romaine lettuce leaf, chopped tomatoes, diced onions, and avocado slices. Serve with hummus on the side to dip. Yum!

my favorite sandwich is cucumber, extra sharp cheddar, lettuce and tomato on whole wheat bread. Avocado can also be added. I use a small amount of mayonnaise and sometimes a sprinkle of basil, thyme or marjoram. Yum!

ciabatta + thin layer of fig spread/fig butter + quartered fresh figs + goat cheese + carmelized onions + drizzle of aged balsamic vinegar all in the panini press = delish! best when figs are in season and so sweet!

My favorite veggie sandwich is now at subway. I start with a veggie patty and add the following: lettuce, tomatoes, pickles, banana peppers, black olives, monterey jack cheese with lite mayo and honey mustard on lightly toasted wheat bread. very good. I have don't have to make it myself. That's always a plus.

Grill up some boneless, skinless, lean chicken and glaze with sweet and sour sauce. Put on a whole wheat or whole grain soft tortilla wrap or even a tomato or spinach flavored wrap and add pineapple, brown or white rice, and veggies such as banana peppers, spinach, green peppers, or any vegetables you prefer really. Enjoy!

Slice open a fresh avocado and mash with a fork to make guacamole. Spread guacamole on insides of 2 slices of rosemary focacia bread. In between, layer Boar's Head turkey breast, provolone cheese, tomato and bacon. Add a splash of balsamic viniagrette to the guacamole, yum!

My favorite is a BBT on ciabatta: grill cut sides of ciabatta bread slices, add juicy heirloom tomato slices and thick-sliced crisp bacon, top with fresh basil leaves and mayo to taste. To die for!

My favorite Sandwich to make is a turkey pastrami and asiago cheese. I spread a little olive oil mayo and olive tapenade on fresh jalepino bread. Or sometimes I omit the mayo and put in a sandwhich press for a hot sandwich. Yummy.

Barbecue Grilled Cheese! Brush your bread with olive oil instead of butter, put on your favourite cheese and anything else you desire and grill on the barbecue! Its a classic winter comfort food made over for summer! I really like sourdough bread, extra-old cheddar and spring greens on mine!

Halve a baguette, drizzle both halves of bread with olive oil, lots of balsamic vinegar and a heavy sprinkling of Italian herbs. Then layer on Roma tomatoes, fresh mozzarella and thick strips of hot bacon. No substitutions and be liberal with the vinegar and oil. The cool of the cheese and tomatoes combined with the hot bacon and tart sweetness of the vinegar will make you moan and roll all over the floor.

My all-time favourite sandwich is the classic peanut butter and banana. I like to eat it on multigrain or rye bread, rolled up in a whole wheat tortilla, or spread on rice cakes. Another favourite is whole wheat toast with peanut butter and thinly sliced tomatoes, it's delicious!

My mother used to make us this all time favorite sandwich for a hearty after school snack before we ran out to go get worms or climb trees :) It is ideal with a home made lemonade. Take a golden brown yummy crusty French baguette, the crustiness is delightful against the softness of the fish, but you can also use ciabatta bread or multigrain loaf if you like something more tender. then stack up: - norwegian smoked salmon - very thin slices of fresh lemon - very thin slices of cucumber - creme fraiche whipped with chopped dill, salt, and pepper This sandwich is deliciously fresh and tangy, perfect for summer heat. Enjoy!

Super Sandwich- Chicken Breast and bacon yum, yum, yum! --to start off, have a plain boneless chicken breast seasoned with poultry seasoning and cut into small sizes just big enough to take a good bite into. --grill on the Panini maker until nice and cooked on the inside. --next, take about 3 pieces of bacon and grill on Panini maker while its still hot. --set bacon and chicken aside. --time to start loadin' up the sandwich! --grab a ciabatta roll and gently apply a layer of Chipotle dressing on one side of the bread. --after the dressing, place pieces of green lettuce on top. -- next, place a piece of provolone cheese over the lettuce. --put chicken pieces and bacon pieces on top of everything, put the top of the ciabatta roll to finish it, but wait! theres more! --put the whole sandwich on the Panini maker and grill until nice grill makes come on and the cheese melts a little! eat it while it's nice and warm :)

All Natural PB and Berries 2 slices of honey whole wheat or other wheat/sweet bread 2 tbsp all natural peanut butter or almond butter spread on toasted bread (the all natural is best) fresh blueberries placed on top of the nut butter. and done! is best served with coffee or milk!

The Veggie Cabra: -Roasted veggies ( I like to use red peppers, yellow squash, zucchini, egg plant, and baby portabelas) I just roast them on skewers like kababs. -Home made bread, my wife makes an awesome whole wheat white blend. Make sure you lightly toast the bread. -Basil -Goat cheese It's as simple as one slice of bread gets slathered with basil, the other with goat cheese. Then the veggies go in the middle, make sure they are warm so the melt the goat cheese some. It's legendary summer goodness!

Try this one out. It's cleverly named "The Veggie-mite Sandwich" by my Dad, stemming from his loving nickname for me--"Termite"--because when I visit home, I can't help but raid his fridge! The Veggie-mite Sandwich: (use all organic if possible!) +Toasted Jewish Rye bread +Spread Vegenaise on one piece, and mashed up avocado on the other +Salt, pepper, and spice the avo side +Generously layer fresh spinach leaves on top of the Vegenaise +Place sliced tomatoes on top of the spinach (the spinach creates "a barrier" as we like to call it, preventing the tomato juice from soaking through the bread... genius!) +Drizzle Apple Cider Vinegar and olive oil onto tomatoes +Add slices of English cucumber +Press raw sunflower seeds, pumpkin seeds, and/or ground flaxseeds into avocado side of bread +Add alfalfa sprouts and shredded carrot Now, holding your breath, gingerly put the two sides of bread together. Stick a toothpick in it to help keep things neat. Yum!

i live and die for this vegetarian sandwich! take two pieces of WHOLE FOODS 365 100% WHOLE WHEAT BREAD. put enough ANNIE'S NATURALS GODDESS DRESSING on each slice to cover it, but not drip. then, slice two slices of TILLAMOOK EXTRA SHARP CHEDDAR CHEESE (as thick as you like!...there's no animal rennet in this cheese!) and put one on top of each piece of bread. toast until the cheese is melted. (putting the dressing on before you toast helps to evaporate the moisture in the dressing just enough that it doesn't drip everywhere once you eat it!) once you take out the slices from the toaster oven, add BONE SUCKING MUSTARD (SWEET-HOT) and SRIRACHA SAUCE (optional, if you like spicy) to each slice of bread. since the cheese is melty, i like to swirl the mustard and sriracha right into the cheese on each side. add four slices of TOFURKY TURKEY OVEN-ROASTED OR HICKORY SMOKED SLICES and a leaf of KALE (folded in half to fit on the sandwich) and enjoy! seriously...this is YUMMMMMMMMM!

Falafel Veggie Madness~ Don't question, just make and love. 2 slices of Rudy's Organic Double Fiber Bread, toasted. (have to toast - otherwise it falls apart.) Organic Veganaise and Organic stone-ground spicy mustard on one slice of the bread. 1/4 Organic Hass avocado, smushed on the other slice of bread. I ball of Aromouni's falafel, cut in half, with a dollop of Tahini on the top of each half Organic Sunflower sprouts - Fuller's are great Organic Alfalfa Sprouts - Fuller are the best and last the longest in the fridge! I handful of Organic Girl's "SuperGreens Mix" 2 cranks of Organic black peppercorn, Absolutely delicious! Perfect summer sandwich! 100% vegan, All organic except for the Falafel, which is gluten-free and vegan though. Can be made exactly the same with gluten-free bread for an almost as incredible taste and would be wheat-free as well!

My family calls this the Experimental Sandwich as we just made it up one day. (It won my husband's heart) -Slice a loaf of chibatta (or your preference of bread) lengthwise. -Cover both pieces with your favorite hummus. -Cover with fresh basil, you can never have too much! (I like to chiffonade the basil first but it's not necessary) -Cover with slices of tomato (We love the summertime heirloom varieties from our local Whole Foods) -Sprinkle with balsamic vinegar, olive oil and salt per your tastes -Broil on high until the tips of bread look toasty (abouy 10-15 minuts) -Slice and serve, it should be enough for four adults. We can't eat this open-faced sandwich fast enough! If you want a closed sandwich skip the basil and tomatos on the top slice of bread, close it up after you broil it and slice, this version serves 2-3 adults though. Please enjoy, swap thigs out as you like and make your own ES version 1.0 =)

I like my sandwiches low-carb, so I take low-carb tortillas, pesto, fresh tomatoes, smoked mozzarella, Italian dressing and smoked paprika and roll them around a slice of cooked turkey. Oh yeah!

My kids love my eggplant bacon and tomato grilled cheese panini sandwich. i make a tray full of eggplant bacon in the over or dehydrator which is a great and healthier alternative for real bacon. I add a little plain hummus to either focaccia or ciabatta bread then add eggplant bacon- cheese - thinly sliced tomato-a few leaves of baby spinach! grill it up in pannini press and enjoy!

Here is one of my favorite gluten-free, veggie/vegan and soy free recipe: warm brown rice tortillas slightly so they roll nicely. Spread hummus on top, grated carrots, chopped parsley and some pine nuts. Add salt and pepper if you like and roll up like a taco. Delicious, super quick and a nice snack to take when hiking.

Peanut butter, nutella and banana sandwich. Toast 2 slices of whole grain or multi-grain bread, spread peanut butter on one slice, place slices of a banana on the peanut butter and spread chocolate nutella on the other piece of toasted bread, sandwich together, its like dessert, yum!

This is my twist on the all American favorite-BLT Lightly toast 2 slices of your favorite bread , add 3-4 slices of crisp turkey bacon, 3-4 slices of ripe tomato, lettuce, 1/2 sliced avacado, thinly sliced red onion. Mayo is optional as this is a rich and hearty sandwich.

I usually grilled chicken breasts (with simple salt and group peppers) for dinner and used leftover for lunch the next day. Slice grilled chicken breasts and stuff each half of the (homemade) pita pocket bread with chickens. Slice fresh mango and carrot then add to the pita pocket. Drizzle sweet mustard sauce (mix together 2 Tbs Vegenaise, 1/2 Tbs Eden organic yellow mustard, 1 tsp lemon juice, and agave nectar to taste). Serve with sea salt chips and maple lemonade. Also try stuff pita pockets with deli meat (like Wellshire Farms).
