We love to grill in August/early September when there are tons of late summer vegetables. Basically we do the "ratatouille vegetables" - peppers, zucchini, eggplant, brushed with olive oil - as well as some thick fish steaks and/or scallops, and the people who think they came for the seafood (we live in Maine) end up loving the veggies just as much!

I grew up in a house where grilling was a year-round event no matter what the temperature outside. Summer was still always the most fun season for everyone - lawn chair patterns on our legs, charcoal grill smell in the air and watermelon juice running down our chins. I can't wait to give those memories to my kids.

Grilling keeps the heat outside and the house a little cooler when it's warm outside. It's an easy way to cook while doing other things. It saves time and make fixig dinner an easy chore.

Every few days I grill as many vegetables as I can fit on my grill! Sliced eggplant, sweet onions, zucchini, yellow squash, assorted color bell peppers, portabello mushrooms, asparagus, baby artichokes - actually any veggie that looks good to me that day. Brush veggies with a marinade made from balsamic vinegar, extra virgin olive oil, kosher salt and freshly ground pepper and my secret ingredient - Herbs de Provence. Grill til done to your preference. Serve at room temp, or if you forget to take them out of the fridge, nuke until the chill is off.

My kids love BBQ chicken. I have a hard time getting healthy poultry down them so this is a good and easy way. We just get organic, skin-on chicken pieces (drumsticks, wings, thighs, bone-in breasts) and coat with Whole Foods 365 BBQ sauce. Throw on the grill and the kids devour them!! We love Whole Foods!!

When I was a kid I used to eat grilled hot dogs at every cookout, no matter what everyone else was eating. Since then I've graduated to the good stuff. Once the temperature reaches 75+ degrees, it's time to grill out by the pool. Turkey burgers, corn on the cob, and Chilean sea bass are my favorites.

I love kebabs on the grill to start summer off right, especially lamb. I take lamb stew meat, marinate it in lemon juice, olive oil, oregano, minced garlic, rosemary, black pepper, and a pinch of salt overnight. Then I put it on a skewer with whatever veggies my family is in the mood for (tomatoes, peppers, onions, eggplant; etc) and put it on the grill. I serve it with homemade spelt pita bread and lemon parsley orzo salad. And, all of the above is best eaten outdoors!

Carol Burger says …

Our favorite summer grill meal is to purchase fresh scallops at Whole Foods and marinate them in a combo of olive oil, lemon, and soy sauce, then add mushrooms and chunks of red and yellow peppers to the marinade. After soaking wooden skewers in water, we build scallop kabobs by alternating the scallops, peppers, mushrooms and chunks of fresh or canned pineapple, and grilling them over medium hot coals for 5-8 mins (turning once)...yum. Served with a salad and crusty bread, it's a delicious summer meal. Is there room to tell you about dessert? :-)

They're also delicious sprinkled with some grated parmesan and balsamic vinegar before serving. I'm going to try some of the grilled fruit ideas mentioned also!
