My special ed class has a school garden. In June we celebrate the coming of summer by having our "Bowl of Lettuce Garden Party". We grill anything that we have grown:organic squash, onions, green beans and hot dogs!!! The kids invite their parents and sibblings and we all have a ball!!!

When I was a kid I used to eat grilled hot dogs at every cookout, no matter what everyone else was eating. Since then I've graduated to the good stuff. Once the temperature reaches 75+ degrees, it's time to grill out by the pool. Turkey burgers, corn on the cob, and Chilean sea bass are my favorites.

I love kebabs on the grill to start summer off right, especially lamb. I take lamb stew meat, marinate it in lemon juice, olive oil, oregano, minced garlic, rosemary, black pepper, and a pinch of salt overnight. Then I put it on a skewer with whatever veggies my family is in the mood for (tomatoes, peppers, onions, eggplant; etc) and put it on the grill. I serve it with homemade spelt pita bread and lemon parsley orzo salad. And, all of the above is best eaten outdoors!

BBQ's bring back childhood memories of wonderful food, aromas, and the sizzle of meats on the grill. It also means that summer is here and happy outdoor meals with family and friends. The warm evenings invite outdoor eating of grilled meats, veggies, along with scrumptious sides. The ambiance invites lingering after dinner with good conversation.

I grow my own squash and eggplant. I pick them young and tender. I add a little olive oil and mrs dash and grill them. I find that even kids will eat veggies prepared like this especially after they pick they do the harvesting.

Our favorite summer grill meal is to purchase fresh scallops at Whole Foods and marinate them in a combo of olive oil, lemon, and soy sauce, then add mushrooms and chunks of red and yellow peppers to the marinade. After soaking wooden skewers in water, we build scallop kabobs by alternating the scallops, peppers, mushrooms and chunks of fresh or canned pineapple, and grilling them over medium hot coals for 5-8 mins (turning once)...yum. Served with a salad and crusty bread, it's a delicious summer meal. Is there room to tell you about dessert? :-)

I'm a big fan of grilling all kinds of veggies (like many people mentioned). I drizzle with olive oil, and a little kosher salt and pepper before grilling. They're also delicious sprinkled with some grated parmesan and balsamic vinegar before serving. I'm going to try some of the grilled fruit ideas mentioned also!
