I too love the Putamayo label, one of my dearest friends mother who lives in Cuernavaca makes the most amazing flan. Arrachera Mexican Flank Steak, Chile Quilles, or Flores de Calabaza con Queso de cabra (amazing stuffed squash blossoms) are some of my favorite Latin dishes.

My favorite Latin artist is Gloria Estefan especially when she was singing with her husband, Emilio Estafan's band, the Miami Sound Machine. I continue to enjoy her singing to this day because she has her own style and unique sound.

Vegan Black Bean Enchiladas with avocado and mole sauce is one of my faves to make. And baked cinnamon apple churros for dessert!

My favorite Latin dish is an improv combo of Black Beans & Rice (improv means I throw in additional items when I have them, and I don't measure the spices) -briefly coat the rice w/ warm olive oil & garlic, cook in Pacific low sodium veggie stock in rice cooker. -saute onions, garlic, red pepper, (other kinds of peppers), cilantro until onions are transparent -throw in black beans (canned or presoaked & fast boiled), and - here's the improv: kale, chard, spinach or other greens mango seasonal veggies (microwave ones first, that won't stir fry quickly) I sprinkle everything with chili powder, cumin, pinch of salt, pepper drizzle with lime juice Serve the beans on top of the rice, garnished with cilantro and a couple of wedges of lime

We listened to a wonderful assortment of Latin artists growing up in the 60s and 70s, Jobim/ Gilberto/ Wanda de Sah/Sergio Mendez/ bola sete/Santana / loved eating guacamole,ceviche, pupusas with cabbage. Love the cold brewed coffee in little cruets in Guatemala and you would pour it to your favored strength into hot or cold milk or water. Thanks for your wonderful music. You help spread happiness in the world! :-)
