This class will be taught by Chef Ani. Many of us keep pasta on hand in the pantry- for a quick dinner, a light lunch or as a base for our favorite hot dishes and comfort foods. Dried pasta is a great staple, but fresh pasta takes those dishes to a new level. Freshly made pasta has a luscious texture and rich flavor- and is easily made in your own home with only four ingredients, all of which are probably in your kitchen right now. Join Chef Ani as she rolls out pasta history, shows you the science behind mixing perfect pasta dough and how to make four different dishes perfect to celebrate late summer. We’ll explore different pasta shapes and techniques, and discover how to pair the right noodle with the right sauce. Additional lessons in this class include how to choose the right type of flour for the right job, how make a delicious low-fuss roasted tomato sauce, how to make hand shaped pasta, and how to make filled pasta. This class has lots of hands on opportunities and has vegetarian options upon request (please specify upon registration). This class will be taught by Chef Ani. We’re big on breakfast, love lunch and dinner is delightful, but sometimes, you get hungry in between meals, especially when you’re learning hard in school. In this class, we’ll learn how to make some of Chef Ani’s favorite snacks that kids can make all by themselves. We’ll talk about how to make a snack that is delicious and good for you, and whip up some yummy treats that are perfect for after school. Our snacks will be smashed guacamole with jicama, peanut butter and jelly frozen yogurt cups, onirigi (Japanese rice balls), watermelon smoothie and pizza dip. This class has vegetarian options available upon request (please specify when registering) but cannot be vegan or gluten free. This class will concentrate on the nuanced art of preparing flame grilled and roasted meats in the tradition of the churrasco while accompanying our meaty masterpieces are some of the most flavorful and fantastic side dishes that Brazil has to offer. If you've ever wanted to experience this Brazilian barbecue tradition but without the pretentious restaurant vibe then this is the class for you. The Midwest is home to some of the best products and producers in the modern foodscape, and today, we will celebrate the 2019 harvest season by highlighting some of the best local foods that the Midwest has to offer. Chef Jeremy will scour the store to present a plethora of local items, all sourced from the mighty Midwest. We will use our bounty to prepare a hearty meal together featuring everything that Chef Jeremy has foraged from the shelves of the market that celebrates our Midwestern culinary heritage. Eating local subjects us to whatever is available in the market the day of, so while the menu is just a framework, our meal is certain to be delicious. Though they might not be called such, many countries around the world have their own spin on dumplings, including stuffed pastas or wrappers, potato dumplings, steamed dumplings and fried dumplings. Dumplings are endlessly satisfying and easy to make at home, and a great way to take a culinary voyage without going further than maybe the pantry. In this class, we’ll make dumplings from Italy, Korea, China, India and Germany to examine the different forms and flavors that these dumplings can offer, and learn the essential steps for making flawless dumplings again and again. This class will be taught by Chef Jeremy. There has been resurgence in popularity of home canning. Where once it was the simple act of storing food for preservation, canning has become more of an art form. We will start by teaching the basics, making and canning a simple salsa, and get increasingly complex from there, making our own pickles, giardiniera and spicy pickled green beans. You’ll also learn the difference between a “quick pickle”, a “can” pickle and truly fermented pickle. After completing this class, you’ll be ready to tackle your garden or grocery store bounty with ease. Every participant can expect to take home several jars the recipes we make in class to enjoy at a later time. Note: Dinner is not provided with this class but snacks will be available throughout the session. This class can be vegetarian or gluten free upon request (please specify at registration). This class will be taught by Chef Ani. If you missed out on the first few Summer baking classes, here’s another round of our most popular kids’ class: beginning baking. Many kids have a sweet tooth (or teeth!), and baking is a great way to learn reading comprehension, math, science and more in the kitchen. In this fun class, we’ll learn how to make some kid friendly baking classics. You’ll make your own cheese pizzas, brownie bites, blueberry scones and pumpkin muffins. You’ll learn all about ingredients and what many different baking terms like “cream”, “whip” and “sift” mean. This class is good for vegetarian kids, but cannot be gluten free or vegan. Classes are suitable for kids ages 5-12, and are drop off classes- kids only please! Please wear clothes you don’t mind getting a little dirty. Though it is actually one of the easiest and most delicious things a home cook can prepare, there are some tricks to learn and knowledge to undertake before you can effortlessly turn out perfect seafood at home, and this class aims to give you exactly that. If you haven’t had our seafood before, you’re in for a real treat- it is fresh, sustainable and absolutely delicious, with no antibiotics, growth hormones or preservatives. This class will be taught by Chef Ani. There is some serious science behind cooking protein rich foods such as meat and seafood. Adding meat to a hot pan or oven seems like a simple thing, but there’s a lot that goes into giving you a perfect sear, a precise doneness and crispy skin. Luckily, with a few tricks of the trade, proper pan selection, a little patience and a little time, you can turn out restaurant-quality proteins without making a reservation or paying a premium. The first step to cooking great meat is to find a great butcher, and we’ve got you covered. In addition to our always available helpful butchers, Chef Ani can teach you how to perfectly poach, grill, pan fry, pan sear, roast, stir-fry and braise delicious meaty dishes. You’ll also learn how to build a great broth, how to make a glaze, how to make a spice rub and how to properly dredge or bread meat. You’ll discuss thermodynamics, pan selection and the science of seasoning, then tuck into the delicious dishes that you will create with warmer temperatures and quick meals in mind. Our class sizes are small, making the experience nice and intimate, with lots of fun and culinary tricks and tips to pick up along the way. In this class, we’ll whip up the classic, satisfying dishes of the American steakhouse with a focus on best quality meat and seafood and fresh summer vegetables. Chef Ani will show you how to make buttercream frosting and turn it all sorts of different colors, how to use cookies, marzipan and candy to decorate, and how to use different piping techniques to make unicorn cupcakes, beehive cupcakes, cheeseburger cupcakes and sunflower cupcakes. This class is good for vegetarian kids, but cannot be gluten free or vegan. Classes are suitable for kids ages 5-12, and are drop off classes- kids only please!
