1 cup chopped nuts (like almonds, walnuts, or peanuts), (optional)
Preheat the oven to 350°F. Oil a 9x13-inch baking dish and set aside.
Spread oats on an ungreased baking sheet. Bake for 15 minutes, stirring occasionally, until lightly toasted. Allow oats to cool to room temperature.
In a large mixing bowl, combine the oil, honey, vanilla, chocolate chips, and nuts, if using. Add the oats and toss to combine. Spread mixture into the prepared baking dish, pressing down firmly to compact it. Bake until golden brown, 20 to 25 minutes. Cool completely and cut into bars.
