Golden Glazed Acorn Squash with Brown Sugar and Cinnamon

This autumn treat is a great side dish to serve with roasted pork chops or pork loin. Look for acorn squash that are firm and heavy for their size.
Ingredients: 
  • 3 acorn squash
  • 1/2 cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon fine sea salt
Method: 
Preheat the oven to 400°F. Split squash into halves and scoop out seeds and fibers.

Place cut-side down into a baking dish. Cover with foil and cook until squash begins to soften, about 15 minutes. Meanwhile, in a small bowl, combine cinnamon, nutmeg and salt.

Remove squash from oven and carefully flip. Sprinkle spice mixture over squash halves and drizzle with melted butter. Bake uncovered until squash is tender, approximately 15 to 20 minutes. (For a deeper glaze, broil for a minute or two).
