Honduran-Style Ginger Cake

This simple treat is inspired by a popular cake made in Honduras. Fresh ginger gives it a subtle heat and grated yuca is the secret ingredient that adds a chewy texture. Inspired by Whole Planet Foundation® microcredit client recipes.
Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1 cup canola oil
  • 1 cup grated yuca
  • 4 teaspoons grated fresh ginger

Method

Preheat the oven to 350°F. 

Line an 8x8-inch baking pan with a long sheet of parchment paper, allowing for 2-inch overhang on each side.

In a large bowl, whisk together flour and baking powder. 

In a separate bowl, stir together sugar, oil, yuca and ginger. 

Stir sugar mixture into flour mixture until blended. Spread batter into the prepared pan. 

Bake until golden and a toothpick inserted in center of cake comes out clean, about 45 minutes. Let cool completely. Remove cake from pan and cut into squares.
