Le Gruyere Salad with Apples and Cider Vinaigrette

Serves 4

This is excellent way to savor Le Gruyère either as a starter or as the finish to a meal. Start with the cheese slightly chilled to help you cut neat, very thin shavings.

  • 3 tablespoons safflower oil
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups mixed salad greens
  • 2 tart apples, cored and diced
  • 3 tablespoons toasted walnuts
  • 1/4 pound piece Le Gruyère cheese

In a large bowl, whisk together oil, vinegar, salt and pepper. Add greens and apples and toss to coat with dressing. Sprinkle with walnuts. With a vegetable peeler or cheese slicer, shave thin slices of Le Gruyère over the top.
