Le Gruyère Salad with Apples and Cider Vinaigrette

This is excellent way to savor Le Gruyère either as a starter or as the finish to a meal. Start with the cheese slightly chilled to help you cut neat, very thin shavings.

Ingredients
- 3 tablespoons canola oil
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- 6 cups mixed salad greens
- 2 tart apples, cored and diced
- 3 tablespoons toasted walnuts
- 1/4 pound piece Le Gruyère cheese
Method
In a large bowl, whisk together oil, vinegar, salt and pepper.
Add greens and apples and toss to coat with dressing.
Sprinkle with walnuts.
With a vegetable peeler or cheese slicer, shave thin slices of Le Gruyère over the top.
