Papaya-Tomato Sweet and Sour Sauce

This unusual combination of ingredients cooks up into a sweet and lightly spicy sauce with a fresh tomato flavor. Spoon over roasted vegetables or use as a dipping sauce for your favorite Asian-inspired appetizer.
Ingredients
  • 1 (28.0-ounce) can no-salt-added crushed tomatoes
  • 1/2 cup orange juice
  • 1/4 cup dried apricots
  • 2 tablespoons unseasoned rice vinegar
  • 2 cloves garlic, smashed
  • 1 tablespoon finely chopped fresh ginger (from about 1-inch piece of ginger)
  • 1 cup diced fresh papaya
  • 1/4 teaspoon crushed red chile flakes

Method

In a medium saucepan, combine tomatoes, orange juice, apricots, vinegar, garlic, ginger, papaya and chile flakes.

Cover and simmer until apricots are soft, about 10 minutes.

Cool slightly, then purée in an upright blender until very smooth.

Chill until ready to serve.

Refrigerate in an airtight container for up to 5 days.
