Peach and Quinoa Purée

Introduce young palates to protein-packed quinoa by puréeing it with fresh summer peaches.
Ingredients
  • 3/4 cup quinoa, rinsed
  • 3/4 pound small peaches (about 3), peeled, pitted and chopped

Method

Combine quinoa and 1 3/4 cups water in a medium saucepan and bring to a boil.

Lower heat to medium-low, cover and simmer until just tender, about 15 minutes.

Remove from heat, uncover, scatter peaches over the top and quickly cover again.

Let sit for 5 minutes.

Uncover, fluff with a fork, spread quinoa mixture out on a large plate and let cool until warm.

Transfer quinoa mixture to a food processor and purée until smooth.

The purée will keep refrigerated in an airtight container for up to 3 days or in the freezer for up to 3 months.
