Peppery Brunch Potatoes

Serve these peppery potatoes for brunch or as a side dish along with your favorite egg dish.
Ingredients: 
  • 6 yellow new potatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Method: 
Place potatoes in a medium pot. Cover with cold water and add a generous pinch of salt to the water. Cover and bring to a boil over medium-high heat. Reduce heat and simmer 8 to 10 minutes, or until potatoes are fork-tender.

Drain potatoes and place in a bowl. Drizzle with oil and season liberally with salt and pepper. Serve immediately or cover with foil to keep warm.
