Roasted Whole Garlic

Makes 6 bulbs
Roasting mellows garlic and gives it a creamy, spreadable consistency. Use as a garnish when serving your turkey or as an appetizer with small butter knives for spreading on bread or toast.
Ingredients: 
  • 6 firm heads of garlic
  • 3 tablespoons extra-virgin olive oil
  • 1/4 teaspoon coarse sea salt

Method: 
Preheat oven to 400°F. Cut across the top of each head of garlic, exposing the top of the cloves; discard. Place garlic in a small baking dish, cut side up. Drizzle evenly with oil and sprinkle evenly with salt. Cover dish with foil and roast until garlic is soft and golden, about 1 hour and 15 minutes.
