Spicy Braised Potatoes and Chickpeas

Inspired by traditional Indian curries, this sweet potato and purple potato braise comes together quickly with some help from our Indian Healthy Earth Seasonings (look for this in the meat department).
Ingredients
  • 1 tablespoon plus 2 teaspoons Organic Healthy Earth Seasonings Indian Earth Blend
  • 1 teaspoon ground turmeric
  • Cayenne pepper, to taste
  • 1 medium yellow onion, roughly chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon no-salt-added tomato paste
  • 4 cups low-sodium vegetable broth
  • 1 (14.5-ounce) can no-salt-added diced tomatoes
  • 1 (15.0-ounce) can no-salt-added garbanzo beans (also called chickpeas), drained and rinsed
  • 1 pound sweet potatoes, peeled and cut into 1-inch cubes
  • 1/3 cup raisins
  • 1/3 cup chopped dried apricots
  • 1/4 cup chopped fresh cilantro, for garnish
  • 1 pound purple or red potatoes, cut into 1-inch cubes

Method

Toast seasoning blend, turmeric and cayenne in a soup pot over medium heat until fragrant, about 2 minutes.

Add onion and garlic, lower the heat and continue cooking until slightly softened, about 4 minutes.

Add tomato paste and stir to coat.

Add broth, tomatoes, beans, sweet potatoes, purple or red potatoes, raisins and apricots.

Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until potatoes are very tender and the mixture is thickened, about 45 minutes.

Garnish with cilantro and serve.
