Spinach and Watercress Salad with Honey-Almond Dressing

Watercress lends a subtle peppery flavor to this easy green salad that’s tossed with a unique dressing made from almond butter. Both the mixture of greens and the dressing can be prepared ahead of time, but wait to combine them until right before serving.

- 1/4 cup creamy almond butter
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1/2 shallot, finely chopped
- 1/2 teaspoon coarse sea salt
- 1/4 teaspoon ground black pepper
- 3 cups packed baby spinach (about 3 ounces)
- 1 bunch watercress, trimmed, leaves torn into bite-size pieces
- 1/4 cup chopped fresh chives
- 1 large cucumber
Method
In a small bowl, whisk together almond butter, lime juice, honey, 1 tablespoon warm water, shallot, salt and pepper until evenly blended.
In a large bowl, combine spinach, watercress and chives.
Cut cucumber lengthwise in half, scoop out seeds and thinly slice.
Add cucumber to bowl with greens and drizzle with honey-almond mixture.
Gently toss until evenly coated.
