To save time in the morning, mix up your batter before you go to bed, pop it in the fridge and when you wake up, give it a few extra stirs before you heat up the griddle. We also recommend doubling the batch to ensure you have the best breakfast all week long — just let your pancakes cool completely and then store them in an airtight container until you’re ready to reheat in the microwave or toaster.
Homemade pancake recipes are especially good in colder months, but by adding different ingredients you can create an entirely new breakfast tradition for any season. In summertime we love using cherries or blueberries, adore pumpkin in autumn and can’t get enough peanut butter and jelly all days of the year.
