Although some people might only think of the sweet potato when Thanksgiving rolls around, there is so much more in store for the humble tuber.
Sweet potatoes can be eaten for breakfast, lunch, dinner and even dessert. If you’re not sure where to begin with sweet potatoes, a healthy and quick way to prepare them is to simply dice and roast on a sheet pan. Add the roasted pieces to your favorite healthy dinner recipes or simply serve them alongside your main dish.
Their natural sweetness makes them a great option for spicy recipes like curries or Tex-Mex favorites. Or fully embrace the sweet angle and use them for baked goods or other desserts. Cooked and mashed smooth, there’s really no end to the kinds of things you can do with sweet potatoes.
Sweet potatoes are also high in fiber, potassium and vitamin A, so you can feel great about eating them. Don’t forget – a lot of nutrients are within the skin, so scrub your potatoes well and eat that skin!
