For many of us, the scent of coconut oil pulls us right into summertime and memories of being slathered with suntan lotion before a day at the beach. These days, however, I’m drawn to coconut oil for its delicious flavor and versatile cooking properties.

Coconut oil for cooking has been gaining in popularity in the past few years, and I always have a jar on hand. I like using it in place of olive oil for stir-frying, or adding it into baked goods in place of butter. It’s easy to work with, staying solid in cooler temperatures and melting to liquid in the warmer months. If a recipe calls for solid coconut oil, just pop the jar into the fridge until chilled, then measure the amount needed.

The mildly tropical taste makes dishes stand out, but if you prefer a more flavorless oil, try the organic refined variety, which doesn’t impart a coconut flavor or aroma.
