Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

I make my own vegan creamy kale sauce that I usually toss with angel hair pasta until all of the pasta is nice and coated. It's rich, delicious, and surprisingly healthy.

Our very favorite topping for pasta is sautéed broccoli rabb with lots of garlic, peperoncino and I add a can of cannelloni beans to the pot. Top with a ladle full of the cooked pasta water and it makes the most delicious sauce over penne.

Vodka sauce is always good. I've had the Cucina Antica Tuscany Pumpkin sauce and really enjoyed it. Butter with sage, tarragon, basil or rosemary is always a nice choice, too.

My favorite non-traditional sauce was a sweet cream white sauce with aromatic spices like cinnamon and allspice served on top of ravioli made with a sweet butternut squash filling. It was almost more like dessert, but a great savory when served in a small amount with a turkey dinner.

My favorite non-traditional sauce is asian-inspired... It's a mixture of coconut milk, vegetable broth, and curry spices. I like to put it over noodles instead of rice for a different twist on an Indian inspired dish.

In a food processor, quickly blend garbanzo beans, lemon juice, lemon zest, garlic, a bit of green onion, crushed red pepper, fresh rosemary or basil, and olive oil and toss with penne or bowtie pasta. Lovely!

Hmm - I don't know that I've actually tried many alternative pasta sauces. I've mostly stuck with the tried and true marinara. This pumpkin sauce sounds delish! Especially with cheese ravioli as you mention. Other than that, I'd say a butter sauce for some sweet potato gnocchi is about the most daring I've been!
