Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

One time, my aunt made us past, but she only had a couple of tomatoes, so she went to the garden and used a bunch of carrots! It was so delicious though, I ate a bowl the size of a pizza. No regrets.

I haven't had many non-traditional pasta sauces, but the most exotic ones that I have tasted have been those I have made myself by throwing random ingredients together: cherry tomatoes, bell peppers, parmesan cheese, and cottage cheese made up one recent sauce concoction.

My favorite non-traditional pasta sauce would be butternut squash sauce, made with butternut squash, tomatoes, onions, plenty of fresh herbs, and seasonings, ladled over fresh homemade linguini, spaghetti squash, and chicken breasts! It is just superb! Simple ingredients presented so elegantly! My favorite pasta dinner!

Massive handfuls of any fresh, tender herb I can get my hands on (basil, mint, parsley, tarragon, sorrel, lovage, chives) chopped fine with olive oil, lemon juice, good olives, and black pepper. Yum!

Well, I take traditional sauce and sort of "untraditionalize it" - with nut or seed butter! Peanut and almond butter add a sweet, creamy, and (of course) nutty flavor. Tahini adds a smoky depth and a rich, savory quality - kind of like cheese. :-) Peanut butter pasta sauce? Tomato-tahini sauce? You betcha!
