Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

I don't know how "non-traditional" it is, but I love a simple lemon-garlic-extra virgin olive oil sauce with angel hair, spinach and pignolis.

My favorite non-traditional pasta sauce begins with a fairly conventional Lasagne Bolognese Alforno sauce, but takes a different direction with the extra ingredients I add according to my own taste. These include a substantial amount of brown sugar, free-range turkey instead of beef, lots of green peppers, lots of Vidalia onions, and extra black pepper.

It's great to go to the farmer's market and whole foods and see what is in season. Bring all the ingredients home, throw it together, and top it with one your delicious cheese options and there you go! Never traditional...always fresh.

My favorite non traditional pasta sauce is actually or pumpkin pasta! Pumpkin purée, heavy whipping cream, cinnamon, nutmeg and some salt with ravioli. Delicioso!

My favorite non-traditional "sauce" is to heat up the cast iron pan, add a little olive oil, and toss in a bunch of tiny tomatoes - sungolds, grape, whatever... and let them get a little browned, or burst open, until they are hot and sizzly, then pour them over the pasta with some good olive oil, some cracked black pepper, and shaved parmesan. Yum!!!

I love just about anything made from pumpkin, including this sauce, which I sampled in my local whole foods a couple Weeks ago. My favorite pumpkin dish is from a Japanese restaurant back in my home town of Seattle. It is a pumpkin fried rice that is served in the pumpkin shell, so you can scrape out every last bit of pumpkin. Yum!

Hmmm....braised greens, cherry tomatoes, lots of garlic, a good olive oil, spicy sausage, steamed broccoli, and a grating of yummy cheese like grana padano. But I could imagine pumpkin, black bean, some of that spicy sausage, and - oh, yeah - a grating of yummy cheese like grana padano.
