All around the country, people are welcoming a fall favorite: pumpkin. Whether beautifully displayed in the produce department, artfully carved on doorsteps, or pureed and baked into pies and cakes, this beloved gourd can be found just about everywhere. But, one place you might not expect to find our sweet and creamy orange friend is in pasta sauce. That’s where Cucina Antica Tuscany Pumpkin Pasta Sauce comes in.

Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

This soul-warming sauce is robust enough to toss with cheese ravioli but light enough to drizzle over sautéed vegetables. Want to pull together an easy vegetarian dinner? Just serve Cucina Antica Tuscany Pumpkin Pasta Sauce with you favorite whole wheat pasta and pair with our Green Salad with Beets and Warm Walnut-Crusted Chèvre for a complete fall meal.

The possibilities are endless with a sauce as savory and versatile as this. Want to get your hands on some of this perfect fall pantry staple?

The Cucina Antica Tuscany Pumpkin Pasta Sauce was one of the first things I bought when I discovered a food sensitivity to all grains. It inspired me to make a baked spaghetti squash casserole, topped with this sauce and some roasted pine nuts and some shredded goat cheese. Brought it to a pot luck and it was a huge hit! It's now my favorite go to sauce and I am getting very creative on this new diet.

My husband's favorite is a pasta sauce of tomatoes, garlic, tuna, pepper flakes, oregano, capers, and (he doesn't know how much) butter. One time I went back for seconds and I couldn't find it. "What happened to the pasta?" "I ate it..." he said. "ALL of it?" "I couldn't help myself. I stood over the stove and ate the whole thing."

A favorite non-traditional pasta sauce for me is green enchilada sauce! I purchase a jar of my favorite brand prepared by a local, organic farm, and mix it with quinoa corn macaroni noodles, a roasted array of veggies including onions, mixed peppers (sweet and hot both!), zucchini, and corn, and a vegetarian protein source like either black beans or veggie chipotle sausage (Field Roast makes a yummy version). I then top everything with cheese (cheddar or pepperjack are especially tasty), bake until bubbly and golden, and then serve with fresh cilantro, avocado, and dollops of sour cream. Super delicious! :)

My daughters favorite comfort, feel good and torch your mouth sauce is a simple garlic (tons of Galic!!), Extra virgin olive oil and parsley mixed with a liberal amount of red pepper flakes simmered togther with a cup of the pasta water, some galicky grilled chicken and for an extra flavor boost sun dried tomatoes and a little organic oregano. Mix with your favorite pasta and you've got a comfort meal guarenteed to harvest a smile and warm you up on a cool autumn night.
