I love making homemade pesto but I usually use walnuts instead of pine nuts. I recently read that one can use pumpkin seeds instead - I am going to try that soon!

My favorite is a vegan tomato-based sauce I came up with made with different peppers, zucchini, eggplant, olives, garlic, fresh herbs, spinach, onion, and artichoke hearts.

I've made a faux pesto pasta sauce with cannned peas, olive oil and parmesan cheese. Yum. But I LOVE pumpkin and can't wait to try the Tuscany Pumpkin Sauce.

My favorite go-to non-traditional "sauce" is actually just sauted kale, cubed roasted butternut squash, fresh ricotta cheese and a little pasta water, nutmeg and pepper all mixed together.

I love a fresh tomato sauce -- no cooking involved. Chopped, perfectly ripened summer tomatoes with olive oil, parmesan, salt and pepper. It's essential to pasta in the summertime!
