Inspired by Italy’s rustic harvest, Chef Neil Fusco has created a unique sauce made with peak-harvested pumpkin, flavorful San Marzano tomatoes, and an aromatic combination of garlic, rosemary and sage, all simmered with a touch of cream and perfected in small batches.

I love making homemade pesto but I usually use walnuts instead of pine nuts. I recently read that one can use pumpkin seeds instead - I am going to try that soon!

I've made a faux pesto pasta sauce with cannned peas, olive oil and parmesan cheese. Yum. But I LOVE pumpkin and can't wait to try the Tuscany Pumpkin Sauce.

My favorite go-to non-traditional "sauce" is actually just sauted kale, cubed roasted butternut squash, fresh ricotta cheese and a little pasta water, nutmeg and pepper all mixed together.
