My favorite non-traditional sauce is a rich butternut squash sauce with cinnamon and nutmeg. It's delicious with smoked mozzarella and asparagus!

My favorite non-traditional pasta sauce is a sauce I accidentally made in my oven one night as I fell asleep. I was roasting red bell peppers and ended up roasting them almost overnight. When I came to, I panicked and tried to continue my plans as usual, which resulted in the smoothest paste I have ever seen. I added some other roasted veggies and viola! I would do it again if I could get the recipe exactly right again. I miss that sauce!

I made up a butternut squash sauce in a pinch when I was out of tomato sauce. It includes butternut squash, cooked and slightly pureed so there are still some chuncks in it, sauteed sweet onions , roasted garlic, vegetable broth and is seasoned with salt, pepper, a little allspice and some nutmeg. it has become one of our favorite winter pasta sauces and goes on just about any type of pasta... really good on cheese stuffed ravioli. Slightly sweet and savory together.

Before I found out I was gluten-sensitive, I sometimes just used a nut butter to flavor a bowl of noodles. I guess I could still do that with some rice noodles... :-))) I'm thrilled that this tuscany pumpkin sauce is gluten-free! I can see it over rice or my veggies! Thanks!

I roasted zucchini, peppers, & green beans with garlic & puréed it all with sautéed spinach. My intention was to make some homemade baby food as my little one loves roasted veggies. Problem was I forgot to remove the roasted garlic cloves - 4 of them when I purred it & it was way too garlicky for the baby. So we ate it over pasta & loved it! I froze it in an ice cube tray & take out as many cubes as needed based upon our portions for dinner. What was a mistake became a great find!

I'm partial to asian sauces, and I'm living a gluten-free lifestyle, so I like to make a thai peanut sauce with tamari, grapeseed oil, a little lime juice, a pinch of red pepper flakes, gluten-free creamy peanut butter and roasted peanuts. I add in some coconut milk and cook just until the color darkens a little bit, and serve that mixed into rice noodles. Top with more roasted peanuts and chopped green onions. Kind of my personal (read weird) take on a combination of Pad Thai and Nam Sod (if I brown some ground pork and toss it in the sauce)! Yummy!

Linda says …

have you ever tried sliced onions and thickly shredded cabbage sauted in butter and olive oil over linguini with gorgonzola cheese scattered over the top? It's great!

I had the pleasure of having a garden this summer! i grew roma tomatoes and basil to name a few items. for the first time ever, I tried making my own tomato sauce for spaghetti. i also grew green peppers and really enjoyed the experience of using the basil and tomatoes to stir fry with zucchinni and squash. so, since i am trying to enjoy more vegetables the healthier way, i would enjoy using this sauce with other vegetables.

We do buy these non dairy cheese at Whole Foods (I can't remember the name but it's in my fridge right now)! It comes in a small tub container with cheddar and other flavors. Sometimes we mix that with Whole Foods vegetable pasta's. It's so yummy. This pumpkin sauce is making my mouth water. Sounds fabulous. I hope I win so I can try it. Thank you! Julie

I recently tried a pasta sauce made with butternut squash. UM UM good. Rich and creamy, with a mild flavor. I used it on whole-wheat pasta with kale. I can imagine the pumpkin sauce would have similar qualities. Can't wait to try it.

I like to make a companata type sauce. I saute diced eggplant, onions, garlic, celery, capers, olives and tomatoes and a little hot pepper seeds. I serve it over linguini.

I recently enjoyed butternut squash ravioli with a brown sugar/apple cider sauce. I was not too sure on the combination but wow - that was a good meal! I am inspired to try more non-tradtional pasta sauces now and would love to taste the Tuscany Pumpkin while the cooler seasons are upon us.

My favorite non-traditional pasta sauce is Dave's Gourmet Butternut Squash Pasta Sauce. I use it with gluten free pasta and add grilled chicken. It's amazing and perfect for fall. Pumpkin is my favorite ingredient, but I don't usually use it in a savory way, so I'm excited to try this new sauce!
