My name is Erica Klopf, and I am involved with the Real Food Challenge- a national student organization dedicated to building more just, healthy and sustainable food systems on college and university campuses. We believe in the power of youth to make positive changes in our communities through Real Food: food that truly nourishes producers, consumers, communities, and our environment. The Southeast Regional Training is being held this September at Florida Gulf Coast University in Ft. Myers. I am the lead cook for the event, and am dedicated to preparing delicious local and organic meals from scratch. I love to substitute almond butter in Asian peanut sauces and pour over steamed spiralized zucchini pasta. Totally punches up the flavor!

I would make a huge pot of African Almond Stew! This stew features sweet potatos, red bell peppers, tomatos, carrots, onions, chicken, almond butter, various spices-cinnamon, red pepper flakes, cayenne pepper, etc... and is one of the most favorite meals I make my family!

I would definitely make a loaf of whole wheat bread. Nothing beats a warm slice of bread straight from the oven with a generous slather of almond butter! Mmmmmmm :)

Toasted, thinly sliced Rye bread (toasted a couple of times to make it really crunchy) spread with almond butter and topped with sliced organic green apples and a few organic raisins. Yum yum!!!

I have never had almond butter. Have heard lots of great things about it. I would like to try it as I love to cook and have used peanut butter in my recipes. I love almond so I would love to try it and share with my daughter who loves to bake... :-)

I've been craving rice crispy squares lately, so the first thing I would try doing is mix the natural amond butter in the melted marshmallows before throwing in the rice crispies for a more satiating snack!
