Earth Balance Almond Butter

So, we’re giving away a case of versatile almond butter for summer’s last hurrahs and after-school snack preparations. Read on to find out how to enter to win.

I'd make a bee-line to the flatware drawer for a spoon! Following that I'd make no-bake drop cookies w/ the almond butter mixed with dried cranberries, coconut, pumpkin seeds and crunchies. Then I would make some Thai almond butter sauce for chicken skewers and some lettuce wraps with an almond butter dipping sauce. And that's just for starters!!!!

So crazy easy, but when there's no time to eat lunch, i just grab my pre-cut organic carrots and dip 'em in the jar. It gives me long lasting energy but doesn't weigh me down.

The almond butter would be used as a portion of a date roll. Chopped dates, walnuts, coconut butter, almond butter and rolled in shredded coconut.

One of my favorite sandwiches--almond butter and jelly with sliced cucumbers and fresh dill weed on multigrain bread. Sometimes I'll substitute Vegemite for the jelly. Excellent!

I put a tablespoon of almond butter in my am smoothie everyday with kefir, berries, banana and protein powder. YUMMY!

I will make a chocolate almond butter banana smoothie. The measurements below are just an estimate- I usually just dump in the ingredients as I go. It turns out a little different each time, but is sooo good: 2 tablespoons cacao (I use Nutiva Naturals) 1-2 tablespoons almond butter 1 banana 1/2 cup acai juice (or more if it seems like more liquid is needed) handful of kale, spinach or swiss chard (really, you don't taste it) 1 pint glass full of ice blend in a high speed blender until everything is pureed, then enjoy!
