Earth Balance Almond Butter

From sandwiches to smoothies to cookies, mighty almond butter can do everything peanut butter can; yet, not everyone has tried it. (The reason why is a hard nut to crack!) So, we’re giving away a case of versatile almond butter for summer’s last hurrahs and after-school snack preparations. Read on to find out how to enter to win.

Theoretically I'd make this great almond butter cookie recipe I have. But actually I'd probably smear some on a seaweed rice cake and drop some buckwheat honey on top and eat it with gusto.

My recipe is a little similar to the apple one. It's baked apples with raisins, granola and almond butter inside the baked apple. Yum.

I love to spread almond butter and organic sugar free jam on Nature's Path organic Buckwheat waffles-yum! It's one of my very favorite breakfasts! It's low in sugar, low in sodium, high in protein and could not be more satisfying and delicious!

I actually eat almond butter like ice cream straight from the jar. Almonds are by far my favorite food, I eat ~2 - 3lbs a week. So for me almond butter is like heaven and I would be enjoying these jars as they are. I have told my husband that if I was stranded on a desert island and only had one food to choose it would be almonds.

Chocolate Almond Smoothie 1 c. almond milk, 2 T. almond butter, 1 ripe banana (cut in pieces), 1 T. organic fine milled flaxseed, 1 T. unsweetened cocoa, 1 T. cinnamon, 4-5 ice cubs. Put all the ingredients into a blender and blend until smooth. Serve in a tall glass and enjoy!

I've been fooling around with crepes recently--trying to make the best ones so I can share them with others. And I've also been canning fruit jam. I can think of nothing more delicious than my fresh off the pan crepes folded with almond butter and apricot jam. Come to think of it, I can also blend the almond butter into the crepe batter. Or make an almond butter sauce for them. Yummmmm. So many possibilities. Crepes are a great summer dish (sweet or savory) because you don't need an oven or a lot of heat for very long. Almond butter seems like a terrific partner.

BANANA ALMOND BOAT!! peel a glorious organic banana in it's entirety. cut a wedge into the entire length of the banana, the deeper you cut it, the more almond butter you can get in there! slather the banana with as much almond butter it can hold, and then generously sprinkle with coarse sea salt. and ENJOY! yummmmm!

How wonderful! My own free case of Earth Balance Creamy Almond Butter to make al these goodies! I'm moving into brand new apt. soon!I'll bake, cook, & even make no-cook cookies w/other's small ones. I am alone so I may cook up a storm as my introduction to the new apt bldg! Although my new appliances may be a bit of challenge, I used the same appliances in Sarasota, FL, this last February during the Valentines' Day week.
