Earth Balance Almond Butter

So, we’re giving away a case of versatile almond butter for summer’s last hurrahs and after-school snack preparations. Read on to find out how to enter to win.

As a dressing for my winter squash. Best with Kambosha Squash. Take a 1/3 cup of cooked winter squash, 2 tbl almond butter, and 2 tbs fruit juice sweetened blackberry jam, mix with water until smooth enough to drizzle on top of the stuff squash made with remaining winter squash.

The Chocolate Almond Smoothie sounds good, but the first thing I would try is Almond Butter on my whole wheat waffles with Sour Cherry jam. I like the Almond, Cherry combination.

I have a great recipe for almond butter french toast. In a nutshell, it's like making an almond butter sandwich, dipping it in an egg mixture (a la french toast) and browning it in a skillet with some sweet butter. Extremely yummy!

So delicious and easy to make -- a raw carob-avocado-almond butter pie -- from my friends' book: "How We All Went Raw" (p. 137). Can be made ahead and kept frozen for terrific snacking for as long as it lasts!

I will make an almond variation of tahinopita...or maybe some chickpea-pepperjack biscuits. The roasted almond butter adds such a toasty dimension to both the sweet bread and the savoury biscuits, which I make both vegan and gluten-free.

Like many of the others, I'd keep myself well-supplied with apples and pears so that whenever I need a late-afternoon pick-me-up I avoid the temptation of caffeine and go instead for fresh generously spread with almond butter. Yum! Easy, too.
