I've been trying to eat more veggies this summer, and I have fallen in love with spinach! I've been low on iron, so I've been throwing spinach in with at least one meal a day. I never knew how much I could like this vegetable!

This summer my small family of 4 (including 7 & 9yr old boys that eat as much as their father) packed and moved to a new home, attended Extreme Sports Camp for Autism, and went back and forth to Denver several times. It has been a busy summer and we are all ready for school! Jill

Relearning how to create art in a body I'm not used to thanks to autoimmune. My passions are still a part of me but finding new ways to enjoy them is an adventure.

I've worked up an appetite this summer by hanging numerous Yes on Prop 37 flyers to encourage Californians to vote to label genetically modified/genetically engineered (GMO) food this November. In fact, I almost always have something of Late July's in my pantry, since USDA Organic also means non-GMO (and their crackers are awesome).

Packing a house for 5, dog, cat, fish, organizing it all thanks to Pinterest Moving tips, running 7 miles a day to train for the CIM in December and planning our summer camping trip. Whew, that has made my super hungry for summer fruit tarts and some other tasty homemade healthy popsicles that I nave seen featured on your email blasts. Now once we move, will have the items and perhaps, time to make them.

This summer, between traveling by car with two children across the states (1800 miles one way to be exact) to visit family and being in a new enviroment (went from living in Washington State to Las Vegas, Nevada) and ruptureing two disks in my back I have not had near enough time to do what I do best, Cook. I love cooking and bakeing for my family and feeding them wholesome foods. I am addicted to my kitchen but dont always have time to spend in it, thank goodness for healthy snacks like Late July Peanut Butter Sandwich Crackers.

These little peanut butter sandwich cookies are great. Marvelous peanutty flavor and tiny. You can take some in bag in your purse for a healthy snack.

Going on a 4 mile power walk early each morning and watching the sun come up. Pikes Peak looks beautiful everyday. I then do yoga after my walk and finally get to eat!

I've spent much of my available time this summer trying my hand at gardening green beans, cucumbers, tomatoes, basil, rosemary and okra. Not sure about the okra, but it's interesting. I also have millet and gourds. I get to work off the day's stress and get the satisfaction of watching life at work. The hummingbird and butterflies appreciate my planting for them as well.

Summer peaches have built up my appetite for summer, along with the opportunity to try them in new recipes! I've added fresh peaches to spinach salads, greek yogurt parfaits, baked treats including scones and cupcakes, and even used them to top ice cream!
