I tear up leaves of zingy-fresh romaine, toss in some grated cabbage and carrots, then add grape tomato halves, slices of sweet red pepper, red onion and kalamata olives, and feta cheese, then top it all with freshly-grilled boneless skinless chicken breast and a dressing made of EVOO, lemon juice, dijon mustard and garlic. Super delicious and so nutritious!

My favorite salad satisfies my sweet tooth. I use baby spinach, orange flavored dried cranberries, strawberries, raspberries, walnuts, shredded coconut and poppyseed dressing or orange muscat champagne vinegar. Yum!

My awesome salad recipe!--Kale+cucumbers+red peppers+goat cheese+homemade blueberry dressing (in a food processor or blender= blueberries+olive oil+apple cider vinegar+honey+orange juice). Delicious!!

Fruitful Slaw: 2 cups broccoli slaw, 7-10 baby carrots quartered lengthwise, 2 apples thinly sliced, 1/2 crushed pineapple, 1/2 cup halved grapes, 2 tablespoons extra virgin olive oil, and 2 tablespoons lemon juice. This is absolutely delicious and refreshing on a hot summer day! Super easy and quick!

Fresh baby spinach, sliced strawberries, blueberries, 1 finely diced apple, diced artichoke hears, diced hearts of palm, small handful of raw cashews, oil and vinegar dressing and seasoning to taste. Toss well. Yummy!

One of my favorite salads: Arugula, julienned roasted beets, Laura Chenel's goat cheese crumbled on top. Toss with Cherry Balsamic Dressing (recipe below). Dresssing: 1/4 cup cherry balsamic vinegar, 1/3 cup California extra virgin olive oil, 1 finely chopped medium shallot, honey (I use 3 Tbsp), salt and pepper to taste.

I love tri-color spiral pasta for the color and taste. So I put it in a salad, pasta salad that is. All you need is tri-color spiral pasta, Italian-style salad dressing or whatever vinegar dressing you like and any vegetables you like in a pasta salad. I like tomatoes, onions, cucumbers, olives, bell peppers, etc. Sometimes a little pepperoni, ham or salami is added for those meat lovers.

My awesome salad has mixed greens, sliced pear, goat cheese, sliced almonds, chopped fresh basil, dried cranberries and a simple vinaigrette. I often add a sprig of rosemary to the bottle of vinaigrette overnight or for a few hours before serving.

This Chop Suey salad consists of romaine, spinach, spring mix , finely chopped kale + tomato wedges, beet, jicama strips + apples or peaches or pineapple pieces + shredded carrot and some chickpeas. Any vinaigrette dressing + fan out an hard-boiled egg on top. Sprinkle some nutritional yeast to give a nutty taste. For a quick dinner, add some chicken stripes for more protein.

My favorite salad to make starts off with a combination of frisee and butter lettuce. I top it with cherry tomatoes, roasted beets, grilled halloumi cheese, grilled chicken breast, toasted pine nuts, and olive tapenade. I drizzle a tad of olive oil and balsamic with lemon juice on top, and dig in!

I like to combine firm tofu (cut into 1/2 in. cubes) and kimchi (Korean spicy fermented napa cabbage) together and put it on top of field of arugula greens and sliced cucumbers. For dressing, combination of rice vinegar, soy sauce, and sesame oil goes well with this "Korean"ized salad.

I absolutely LOVE this gluten-free salad and I am sure that you will too! Roasted golden beets (I like adding roasted red beets too) - you can easily roast the beets yourself in the over - just wash, rub with some olive oil and roast in the oven until fork-tender Goat cheese Quinoa Pepitas (pumpkin seeds) Arugula Red onion Basil pesto vinaigrette or a parsley herb vinaigrette These are the ingredients but you can add as much or little as you like of each.
