I made tortillas into tostadas then i roasted eggplant on the grill and made a smokey baba. i topped it with olives bell peppers banana pepper and feta....yummmmmm

About a year ago I planned an amazing prix fixe menu for my boyfriend which included all of his favorite treats. We had gourmet cheeses and crackers for our appetizer, rice krispie treats for dessert, and the best part: homemade penne alla vodka with chicken for our main course. It was the first time I was going to be cooking us dinner and to say I was nervous would be a complete understatement. The night started out perfectly though, as he showed up to my apartment with a bouquet of flowers in hand and an empty stomach. I had already started the vodka sauce since my recipe takes about an hour to cook up, so while that was cooking we enjoyed some wine, cheese, and crackers. My kitchen timer went off and the pasta was complete. I had the table set with my fanciest plates all ready to go. When it came time to serve my dish, I brought the pan to the table to spoon it out individually onto our plates. Apparently, I must have been a little TOO nervous and as I was pulling the dish away from the stove, I bumped the refridgerator and dropped the entire thing on the floor. Pasta, sauce, and chicken went absolutely everywhere, including on me. Fortunately there was still a little bit of pasta left for him to at least taste it (to prove that I'm not completely a horrible cook) followed by a good half hour of us laughing...and then frantically scrubbing the floor so it wouldn't stain. Both still hungry, we decided to take our rice krispie treats in the car as we drove to our local burger joint for some dinner, hoping that they too, wouldn't drop everything on the floor. Here we are a year later and I STILL haven't made that dish for him yet...for fear of spilling it everywhere! I may have acquired a stained carpet that night, but what I also found was the love of my life. :)

I started dinner with a Caprese salad with homemade balsamic vinaigrette. I then made grass-fed rib-eye steaks with bacon-wrapped, cilantro and jalapeño filled shrimp along with roasted rosemary red potatoes. For dessert I made a chocolate creme brûlée. We had a bottle of Chateau St. Jean Cinq Cepages and then a glass of Grand Marnier 100 with dessert. She started crying when I served the entree and I got scared thinking maybe she was a vegetarian or something. I asked what was wrong and she said she was crying because she was happy and that a guy had never cooked for her before. That's when I knew she was hooked! ;-) This after asking her for six months to go out with me.

Cajun Lobster Mac n Cheese... but I threw in some WH Magdalena bay diver scallops too (as recommended by the WH employee). Needless to say it was ah-mazing! A pricey dish to make, but well worth it. We only have it on very special occasions now :)

We celebrate love on Valentines Day as a family. Our children are our true loves! We pick a favorite of each person.... Whether it be gluten free pancakes for breakfast or spinach stuffed mushrooms, Peruvian chicken, flourless chocolate cake... Anything for my loves.

My boyfriend and I both love my organic twice-baked potato pie. It's hearty and delicious! Seasoned beef and onion on the bottom, mashed potatoes, then topped with bacon, cheddar cheese, scallions, and tomato. Mmmmmmm!

Funny story: for years, I thought my boyfriend, now hubby, just loved my spaghetti and meat sauce. I was positive that it was his absolute fave! Then, about a decade later after making it for him for all special occasions, he informed me that it was "alright", but what he loved was fish or seafood!! Needless to say, after getting over the initial shock, I make things like oyster pie, low country boil, bouillabaisse or cioppino, or fish! :)

Homemade pasta sauce with roasted peppers, mushrooms and big chunks of sweet onion mixed into crushed tomatoes, and slow cooked with sweet Italian sausage all day long, then served over rigatoni at dinner time - at first bite, his words were "We need to have this every week." And we do - Pasta Sundays.

Fondue!! My husband makes the most awesome fondue and now we can get good quality ingredients from Whole Foods. My kids love when he makes a batch of fondue for them! Look out for the forks and eat quickly before it disappears!

The first meal that I prepared for my boyfriend (now husband) was a disaster!!! I was 18 and not very experienced in the kitchen at all. I burnt the steak to a crisp, the fries were either overcooked or raw, and the corn was cold! My mom had the bright idea for me to make him a drink, so I did...in this order: poured (flat) tonic water in a glass, add a good amount of gin, and then added the ice. Bless his heart, the guy ate the ENTIRE meal! He stuck around & we've been married for 22 years!

Last Valentine's Day I made my wife chocolate fondue for desert. A decadent mixture of Godiva dark and milk chocolate and Baily's Irish Cream. I can't remember what I made for dinner as desert definitely "won" her over. Nine months later a mutual love of our lives, our son, was born!!

My boyfriend and I are not that into Valentines Day, but we are REALLY into having nice home cooked meals. I do the cooking and he does the dishes. I always like to show how I care for him through the food I make, and he appreciates all the time, effort and thought I put into our food. Sunday night I made a rack of Lamb (which we purchased from the Whole foods on Bowery together over the weekend! Best quality meats are key). It was my first time making lamb, but my British boyfriend is all about it. I pared it with Crispy Roast Potatoes, simply made with some bacon, olive oil, garlic, & Salt. I also made brussels sprouts with a sprinkle of parmesan. And I made yorkshire puddings in keeping with the English theme :) For desert I made an apple crisp and chocolate covered strawberries. A ton of food, but it was all delicious and I know my boyfriend was grateful for the home cooking.

My boyfriend was coming over for about the second time and I wanted to make something somewhat exotic yet easy. I decided to make broiled sage infused tilapia with roasted butternut squash and pan seared kale. I knew he liked dark leafy greens, but had no idea if he even liked squash! As it turned out, I unknowingly cooked two of his favorite foods with the squash and sage! He ate that meal slowly with a look of complete ecstasy on his face!

One of our first dates was shopping together at Whole Foods, admiring the displays and inspecting the produce for our meal that night. We settled on making a salad and roasting a chicken together, with some fresh strawberries and whipped cream for dessert. Cooking together with someone you love (or like very much) is one of life's simplest pleasures!

I just came from the Whole Foods store opening in Katy, TX. I went for 3 reasons. First, get to know the store, 2nd to look for deals and 3rd to buy the ingredients for my Valentine jello hearts. I got organic sweetened condensed milk and cherry jell dessert from Natural Desserts, beside my regular groceries . Since my husband lost his job few months ago, we have had very hard times as family with 2 small boys. But as a mom and wife I need to be strong and keep the love that we have. So, no money for a fancy dinner, instead, I am making beautiful Valentine Jello Hearts recipe I found on internet but I transformed it in a healthier one with no artificial ingredients.

I believe that I've discovered the "Elixir of Love" in my osso buco recipe. Back in 1989 I met a devastatingly charming German architect while working at the Pacific Design Center. Head-over-heels-enamored with my German prince, I concocted a magic potion of saffron, orange peel and enough garlic to sink a battleship. When I served the dish, the heady aromas wafting from the plate were enough to have him propose marriage the next day. I serve my "Elixir of Love" each year on our anniversary--22 times at last count!

My husband saw me pouting during a random PMS time. He asked me what was wrong and I explained to him all I wanted was a cookie ice cream sandwich with mint chocolate chip ice cream. My husband knew I was pouting because I have to eat gluten free and I was thinking this wish was impossible. He went to the store, got all the ingredients including my most favorite brand of mint ice cream, then came home and baked gluten free chocolate chip cookies. He then added the ice cream, made it all nice, smooth, and presentable....then made me cry. I will never let him go. <3

One day I had enough and made him tomato sauce from scratch just like my Italian relatives raised me on. I call this meal the boyfriend maker. I rub salmon with brown sugar and marinate it with orange juice and zest, and then serve it grilled with a pineapple orange (sometimes mango) salsa usually over a rice pilaf or a salad. Then I make a kick-butt trifle for dessert with store bought angel-food cake soaked with cointreau amaretto and/or frangelico's, layered with jam, fruit, and whipped topping. As long as you let the trifle soak for awhile it's all good and alcohol-y and tasty. (Must be 21+!)
