Best Ham Leftovers Ever

Yes, I think the best part of serving a ham for the holidays is having lots of leftovers. I have fond childhood memories of sliced ham on a warm dinner roll. Of course, now my choice would be a whole wheat roll and the ham HAS to be from Whole Foods Market. It really makes a difference! Our hams in the fresh meat cases are from pigs raised to meet our high standards, which means:

  • Raised with no antibiotics – ever
  • Raised with no added growth hormones*
  • No animal byproducts in the feed
  • No added nitrates or nitrites
  • Raised without gestation or farrowing crates

*Federal regulations prohibit the use of hormones in raising pork In addition, our hams contain no artificial ingredients or preservatives. No water is added, so they are full of flavor. Ham and eggs are a legendary combination and they work well together served side by side breakfast-style, or as a frittata, omelet or quiche.

Cubed ham makes a great addition to your favorite macaroni and cheese recipe as well as in scalloped or au gratin potatoes. Leftover ham can add nice flavor to fried rice and is a perfect seasoning for collard or turnip greens. So, how are you serving up leftover ham this season?

I'd like to comment on your statement that the ham WFM carries has no added nitrates or nitrites. Many (not all) of the brands you carry contain celery powder or celery juice. Unfortunately, these additives are converted in to nitrites during processing. So technically, the labeling is correct, but nitrates are essentially added. Cooks Illustrated magazine (July/August 2010) tested several brands of bacon, some with conventional nitrates added and some natural brands labeled "no nitrates added." To their surprise, the natural bacons all had HIGHER levels of nitrites. Applegate Farms bacon (which my WFM carries) had the MOST nitrites - more than THREE TIMES the level of the conventionally cured bacon.
