Dear Gluten-Free Goddess: Thank you for your information, it is invaluable. I just diagnosed my husband's problems as having celeic disease....he has been to one doctor and well, all symptoms are exact. Anyway, I just read your Sweet Potato Enchilada Recipe, 30 minutes ago, and it is now in the oven baking. Thank you! Later....it was delicious! I love all the ingredients but never thought of adding sweet potatoes to enchiladas.d It will be a new favorite.
