a grilled burger topped off with arugula, goat cheese, and red onion, Dijon mustard is the best!

Grilled veggie chili. Grill eggplant, squash, zucchini, and two colored bell peppers. Dice and toss in a pot with a big can of fire roasted diced tomatoes, beans, a little veggie broth and chili seasoning. Top with cheese and/or sour cream. Serve with cornbread or over corn chips. YUMMY!
