Serve with grilled or broiled fish, chicken, or pork. Makes about 1 1/3 cups.

Summer Nachos: Spread an even layer of tortilla chips (I like the strips or a multi-grain variety) on a large baking sheet. Top with diced fresh pineapple, black beans, chopped onion, diced fresh tomatoes, diced green bell pepper and freshly-shredded sharp cheddar cheese (not the dry, pre-packaged variety). Place under a broiler until the cheese melts, remove and sprinkle with chopped scallions. Serve with sour cream, salsa, black bean dip or your other favorite dip if desired. The salty-sweet combination is delicious!

Pineapple Sherbet Ingredients * 1/2 fresh pineapple, peeled and diced (about 1 cup) * 3/4 cup sugar * 2 tablespoons water or pineapple juice * 2 tablespoons lemon juice * 1 teaspoon lemon zest * 1 quart buttermilk Directions In a small heavy bottomed saucepan over medium heat, add the pineapple, sugar, water or pineapple juice, lemon juice and zest. Stir just until sugar melts. Let cool to room temperature. Transfer pineapple mixture to a food processor, with 1 cup buttermilk. Puree until smooth. With the motor running, gradually add remaining buttermilk, until smooth and well blended. Pour into a freezer-safe dish and place in the freezer. Freeze until firm, at least 2 hours. Eat and enjoy!

1 whole pineapple 4-6 Iowa Cut Pork Chops 1/4 onion 3 Tbsp brown sugar 1/4 cup golden raisins 1/4 cup Captain Morgan Spiced Rum Core, peel and slice into large rings one whole pineapple. Grill 4-6 slices turning half way. Grill 4-6 Iowa Cut Pork Chops. Put in blender or processer: 1-2 pineapple rings and 1/4 cut onion and pulse into a salsa-like consistancy. Put salsa in sauce pan, add 1/4 cup golden raisins, 3 Tbsp brown sugar and 1/4 cup of Captain Morgan Rum. Bring to boil and remove from heat. Plate pork chops with 1 ring pineapple on top and ladle saucepan contents on top. Serve with grilled veggies or a fresh green salad.

Pineapple duck curry 1 cup - small chunk fresh pineapple 1 full duck breast (pre-cooked and shredded) 1 14 oz can coconut milk 1 TBSP- red curry paste 1/4 lb snow peas 6 large basil leaves-coursely chopped Prepare duck breast (roast or pan cook just like a chicken breast) let cool, remove skin and shred breast meat Heat coconut milk in a medium to large skillet- add curry paste and sno peas and cook for 5 minutes. Add duck and pineapple and cook another 5 minutes- add basil at the end and serve over rice

My Grandma made this several times a week. Cottage cheese and pineapples. Just cut up pineapple and a bowl of cottage cheese. So so yummy! It's the only way I can eat pineapple without serious heartburn!

Grilled Pineapple 1 Fresh Pineapple, cut into rings 2 T. butter 1 C. brown sugar Sprinkle just a bit of the brown sugar over one side only of pineapple rings. Place on warm grill - medium heat. Melt butter and remaining brown sugar in small saucepan until completely incorporated and bubbly. Brush this on pineapple rings and turn frequently. Grill approximately 2 minutes per slice. Now enjoy your dessert!

Simple Grilled Pineapple -1 fresh pineapple -3 pieces crystalized ginger -1 garlic clove -1/2 cup soy sauce -1/4 cup brown sugar Finely chop garlic clove and crystalized ginger mix with soy sauce and brown sugar. Cut pineapple in half, cross hatch the flesh,cover with soy sauce mixture, marinate 20 minutes, place on heated grill flat side down on top rack, cook about 15 minutes, cool slightley and slice chunks off.

Pork Tortillas with Mango Pineapple Salsa Ingredients: 2 large mangos, seeded, peeled and cut into small chunks 1 small pineapple, peeled, cored and cut into small chunks 1 red onion, minced fine and divided 1 bunch fresh cilantro, chopped and divided juice from 3 limes, divided 3 pounds ground pork Serve with tortillas and shredded monteray jack cheese. Directions: Make salsa by combining mango, pineapple, 1/2 cup of the cilantro, 1/2 of the onion and 1/2 of the lime juice. Set aside. Heat enough oil in a large skillet over medium high heat so that it swirls and coats the pan. Add the remaining onions and cook until soft. Add in pork and continue to cook until no longer pink. Season with salt and pepper. Remove from the heat. Add in remaining cilantro and lime juice. Check mixture and add more salt and pepper if needed. Heat tortillas in the microwave for 45 seconds. PLace meat mixture in tortilla and top with cheese and mango pineapple salsa.

HOMEMADE HAWAIIAN PINEAPPLE SORBET - Sooo easy! Tear off top, remove rind and eyes, cut up and remove core. In a food processor (or blender) place pineapple, one cup at a time, and puree. Add juice of one whole lemon, and sugar (1/4 cup at a time). Some pineapples are very sweet so very little sugar is needed. Process or blend until smooth and creamy. Adjust for personal taste. Put contents in freezable container and freeze for about 4 hours or more. Scoop out frozen sorbet, place in processor or blender and whirr to mix and soften. Not too long. ENJOY! Serve with Kona Coffee Macadamia Nut cookies. Yummy.

Pineapple Cream Cheese Muffins Ingredients: - 225g plain flour - 2 tsp baking powder - 1/2 tsp salt - 100g sugar - 125g of cream cheese - 1 egg - 150ml 2% milk - 120ml sunflower oil - small, fresh pineapple chopped into small pieces 1. Preheat oven to 200C. Line 9 holes of muffin tray with paper muffin cases. Sift the flour, baking soda and salt into a large bowl and mix in the sugar. 2. In a medium bowl stir the cream cheese and egg with a wooden spoon, then gradually add the milk until creamy. Whisk in the sunflower oil with a fork. 3. Make a well in the centre of the flour and pour in the creamed mixture. Mix briefly until the flour is combined. Then stir in the chopped pineapple. Spoon even amounts of the mixture into each muffin case so the mixture comes almost to the top. 4. Bake in the oven for 20 - 25 minutes, or until cooked and golden. Leave in muffin tray for 15 minutes, then tip out and cool on a wire rack.

Pineapple Tropical Salsa 1 pineapple, peeled and cubed 1 - 2 manila mangoes, peeled, seeded and cubed (optional) 1 can of black beans, drained 2 -3 tbsp. of chopped red onion 1/2 tsp - 1 tsp of chili sauce juice of 1 lime bunch of cilantro chopped fine 1 roma tomato, seeded and cubed (optional) 1 avocado, cubed (optional) Combine all the ingredients and chill for 2 hrs. Pineapple Baked Beans 2 cups black beans, dry   1 medium onion, chopped 1/4 cup ketchup 1 tablespoon rice vinegar 2 teaspoons worcestershire sauce 1 cup fresh Pineapple, chopped finely   add more pineapple to top off dish Soak black beans in large pot by adding eight cups of water, bringing it to a boil for 2 minutes, and letting beans sit with lid on for one and a half hours. Drain, but save water, and then place beans back in pot with 3 and a half cups of saved water, bring to a boil and reduce heat to medium. Meanwhile, sauté onion in skillet and add to pot with lid on top. Combine  ketchup, rice vinegar, and worcestershire sauce into beans. Continue to cook on medium to low heat until, stering intermittently, for about 1 and a half to 2 hours until beans are cooked and sauce is reduced. Mash a few beans with potato masher until desired consistancy then salt and pepper to taste if desired. Finally, remove beans from heat and add finely chopped pineapple to beans. Serve with small pineapple chuncks topped on a cup full of beans. Enjoy this extremely low fat, high fiber, high protein, low priced, vegetarian and delicious meal for 4-6.

* Scallops * 3 plum tomatoes, chopped * 1 package fresh shelled edamame * 2 cups fresh pineapple, cut into bite-size pieces * ½ red onion, chopped * 4 garlic cloves, minced Heat a large pan to medium-high, add olive oil and garlic and sauté for about a minute. Add the edamame, pineapple, tomatoes, and onion. Stirring occasionally, sauté for about 10 minutes on medium. Add S/P to taste. Remove from heat, and using a slotted spoon, remove to a bowl – keep warm. 3. Discard juices from pan and wipe clean. Add olive oil and return to medium heat. Cook your scallops on medium, about 2-3 minutes per side until opaque throughout. Season with S/P as you cook. 4. Serve with rice and garnish with cilantro and citrus slices.

My favorite pineapple recipe: Take one ripe pineapple and cut into small pieces, put in the blender with ice cubes and sprigs of fresh mint. Blend for a few minutes and you will have the most refreshing pineapple crush.

Pineapple and Papaya Blend This is a very natural and refreshing juice.In Peru, people have this smoothie as a natural juice for breakfast. 1 pineapple 1 papaya Honey Ice cubes Water Directions Cut off the top and the bottom of the pineapple. Stand the pineapple on its side and cut the skin off of the sides. Cut the pineapple on slices. Taking a slice firmly, begin cutting around the core. Take out the core. Cut the pineapple in cubes. Cut the papaya in a half. Remove the seed inside the papaya. Peal off the skin of the papaya. Cut into cubes. Place equal quantity of papaya and pineapple in a blender, add water, some honey and ice cubes. The quantity of honey depend on how sweet do you like. The quantity of water depend on how liquid do you want your drink. Blend all for 2-3 minutes, until all the ingredients are blended. Use a strainer to separate some divits left. Ready to serve.

1/4 Cup White wine (sweeter is best) 1/3 Cup Golden Raisins 1 Tbl Sugar (or sweetener) One pinch of finely ground cayenne 1 Whole pineapple, Cleane, Cored & Cut into smallish pieces (about 1 - 1/1/2 inches max) 1 small container of blackberries (can use other berries, but blackberries hold up best) In a bowl big enough to hold everything, Soak Raisins in wine until they are plump. Add Sugar and cayenne. Stir well to dissolve the sugar (don't let the cayenne clump up). Add the pineapple and berries and gently stir to coat all fruit with liquid. (Can adjust sugar/sweetener & cayenne to taste.) Stir often as you are serving it, so that each portion gets some liquid and some raisins.

I make a fresh salad with a whole pineapple cut up and put in a food processor with a package of cranberries. process until chunky. mix these ingrediants with either 1/2 cup of fresh grapefruit juice or orange juice. add enough sugar to taste. you may add 1 tsp. orange liqueur. I garnish it with mint. enjoy!!! It is great with ham, turkey or anything festive. I eat it by itself for a refreshing side dish.

Pineapple Appetizer Cut up a whole pineapple into quarter wedges, Then make small individual cuts into pineapple but leaving it in the wedge with skin and all. Finally, put a half of a maraschino cherry on a toothpick and stick it into each individual bite size piece. Simple but Sweet!!

My "Pineapple Pestachio Summer Salad" is a simple and refreshing summer dessert! You will need: 1 fresh Whole Foods Pineapple 1 tub whip topping (large) 1 box pestachio instant pudding (large) 1 can mandarin oranges 1 jar marishino cherries 1 bag sweetened shredded coconut Directions: -Peel, core, remove the eyes and chop Pineapple. -Prepair the pestachio pudding using only half of the milk required. -Drain the juice from mandarin oranges and cherries. -cut marishino cherries is half. -Once pudding has set-up, combine all ingredients. -Refrigerate completes dessert for at least 2 hours. *Sugar free pudding, light whipped topping, and skim milk can be used for a healthier version. *If you would rather your "Pineapple Pestachio Summer Salad" to be served like icecream, the dessert also works froen!

Pineapple Casserole This flavorful pineapple casserole is made with bread cubes, pineapple, a little sugar, and eggs. Serve this delicious casserole with baked ham, smoked shoulder, or roast pork. Ingredients: * 2 cans (8 ounces each) crushed pineapple in juice * 1/2 teaspoon salt * 1/2 cup sugar * 3 tablespoons flour * 3 eggs, beaten * 2 cups fresh bread cubes * 6 tablespoons melted butter Preparation: Combine the undrained pineapple with salt, sugar, and flour. Stir in the beaten eggs. Toss bread cubes with the melted butter; fold into the pineapple mixture. Pour into a 1 1/2-quart casserole dish and bake at 350° for 40 to 50 minutes. Serves 6 to 8.

Better Than Sex Cake Yellow Box Cake 1 Large can crushed pineapples 1 cup sugar 2 cup whip cream or miniature marshmallows 2 cup toasted coconut 1 large box vanilla pudding Bake cake, let cool, poke holes in cake with fork. Pour crushed pineapple and juice from can with sugar into pot and heat to dissolve. Let cool. Pour over cake. Top with prepared vanilla pudding. Top with whipped cream (or miniature marshmallows) and toasted coconut.

Pineapple Casserole: 1 Fresh Pineapple, chunked and 6Tbsp juiced 4oz Sharp Cheddar Cheese, shredded 1c Sugar 6Tbsp Flour 1/2c melted butter 1/2 box Wheat Thins Blend pineapple juice and flour together. Stir in pineapple chunks, cheese and sugar. Put into 1 1/2qt casserole. Crumble wheat thins over top. Pour melted butter over all. Marinate at least 1 hour (even overnight) Bake at 350' for about an hour. Enjoy! May seem like an odd combination, but this has become one of our favorite family holiday staples. Give it a try!

Pineapple Jalapeno Marmalade 1 fresh pineapple, skinned and diced 2 jalapenos, minced (seeded or not, depending on how much you like the heat) 2 c sugar Simmer together in saucepan until syrupy and reduced a bit, around 30 minutes. Great on fish, chicken, or even as a sauce on ice cream!

Grilled Pineapple Hot Fudge Sundae * This is a delicious and decadent final course to a meal - or a treat on its own! 1 pineapple, peeled, cored, and cut into chunks 1 tablespoon butter 2 tablespoons brown sugar 2 oz. high quality dark chocolate, roughly chopped 1 tablespoon whipping cream 1 pint vanilla ice cream pine nuts or chopped macadamia nuts (optional) Heat the butter in a sautee pan. Once it is melted, add the pineapple chunks and sprinkle over with brown sugar. Allow to cook till soft and caramelized. Meanwhile, in a double broiler over medium-low heat, melt the chocolate with the whipping cream. Stir often to prevent burning and clumping. Serve scoops of vanilla ice cream topped with warm, caramelized pineapple and drizzled with chocolate. Top with nuts if desired.

My recipe for ambrosia, a wonderful and simple summer recipe. Fresh pineapple cut up into cubes Mandarin oranges 1 bag Coconut flakes 1 bag mini-marshmallows 1 -2 cups Heavy whipping cream Mix mandarin oranges, fresh pineapple chunks, coconut flakes and mini-marshmallows in a bowl. Beat 1-2 cups of heavy whipping cream until soft peaks form (amount depends on how creamy you like it and how much fruit you use). Mix well together.

One of my favorite ways to eat pineapple is on: Pineapple Flatbread 1 can of refrigerated pizza dough 1/4 cup basil pesto 1/2 cup fresh chopped pineapple 1/4 cup thinly sliced red onion To prepare the flatbread, roll out the dough onto a cookie sheet. Spread the pesto over the dough and top with pineapple and onion. Bake in a 400 degree oven for 12 minutes or until nicely browned.

Pineapple Pick Me Up Juice 1/2 pineapple, skinned 1 orange, peeled 10 large strawberries, topped 1 bunch red grapes Juice together all ingredients in a juicer and serve. This makes 2-3 servings (about 3 cups).

Coconut Grilled Pineapple 1 ripe golden pineapple 1/2 cup unsweetened coconut milk 1/2 cup turbinado sugar 1 teaspoon ground cinnamon fresh mint (to garnish) Cut off the top and the bottom of the pineapple. Stand pineapple up and cut off the skin, cutting downward in strips from top to bottom Place pineapple on it's side and cut crosswise into 1/2 inch thick slices (rounds). You will get between 8 and 12 rounds from a pineapple, depending on it's size. Using a melon baller, remove the core from the center of each slice. Shake the coconut milk can well, then pour into a wide, shallow bowl. Place the sugar and cinnamon in another wide, shallow bowl. Stir to mix. Preheat grill to medium-high. Brush and oil the grill grate. Dip each pineapple slice first into the coconut milk, then the sugar mixture, shaking off the excess between each dipping. Arrange the slices on the hot grates and grill until nicely browned on both sides, about 4-6 minutes per side. Transfer grilled fruit to a serving platter and garnish with mint leaves. Serve hot or cold as a side dish to fish or chicken. You can also turn it into a dessert by topping a warm pineapple ring with a scoop of ice cream!

Pineapple Ginger Salsa is my family's favorate. It's simple and absolutely delicious. Here is the recipe: 1/4 fresh pineapple, diced 1 small mango, diced 1 large tomato, diced 1/2 red bell pepper, diced 1 teaspoon of fresh ginger juice 2 tablespoon of fresh cilantro, finely chopped Stir all ingredients together and season with salt. Pineapple Casserole... great for a side or dessert! 4 cups of pineapple cut into small chunks 2/3 cup sugar 5 Tbsp all purpose flour 1 1/2 cups grated sharp cheddar cheese 1 stick butter, melted 2 cups crushed crackers Layer pineapple in bottom of glass baking dish. Mix sugar and flour together then pour over pineapple. Layer the cheddar cheese on next. Toss the crackers in the melted butter then top the dish. Bake for 30 min on 350. Yummy!!

How about a delicious summer margarita?! 3 cups diced fresh pineapple, frozen 1/4 cup pineapple juice 3 Tablespoons fresh lime juice 1/4 cup tequila 3 Tablespoons Triple Sec 3 Tablespoons Cointreau Place all ingredients in a blender. Pineapple-Payaya Lassie Protein Boost -half a cup of fresh pineapple chunks -1 cup french vanilla lowfat organic yogurt -half a cup fresh ripe papaya chunks -1 scoop vanilla flavored soya protein powder -half a cup organic apple juice Chop on low speed in blender for 1 minute; then blend on high speed for another minute. This is an amazing energy boost first thing in the morning or before a workout - it's fiber-filled, naturally sweet, refreshing and has enough protein to keep you going!

Grilled Caribbean-Style Pineapple Salad 1/2 fresh pineapple, cored and cut into 1" thick rings 1 bunch medium-large asparagus, woody ends snapped and cut on bias into 1" pieces 1 small red onion, cut into 1" thick slices 1 Tbls. Extra Virgin olive oil Freshly ground black pepper and Kosher salt to taste 2 Hass Avocados, cubed and tossed in 1 tsp. lime juice, set aside Toss all ingredients (except avocados) to coat evenly on a sheet pan, then place on a medium hot grill until slightly caramelized, but still crisp. Cut pineapple and onion rounds into 1" pieces and combine with asparagus, avocados and dressing (see below.) Dressing 1/3 cup fresh lime juice 2 Tbsp. Extra Virgin olive oil 1/2 tsp. ground allspice 1/4 tsp ground nutmeg 1/4 tsp cinnamon 1 tsp. fresh thyme, leaves only 2 tsp. light brown sugar 1 Tbsp. fresh ginger, minced 2 garlic cloves, minced 1/2-1/4 habanero chili, minced Combine dressing ingredients in a small food processor then toss Grilled Pineapple Salad until coated but not soggy. Great served with grilled "Jerk Chicken."

My best pineapple recipe: Cut up 3 pineapples into large chunks. Put in an airtight container and pour a 750 ml bottle of quality vodka over the pineapple chunks. Let sit in cool dry place (refrigerator is good). In 10 days...Viola! The fresh, sweet pineapple vodka!

Crush pineapple, saving juice. Mix both to taste with caribbean jerk marinade. Takes some of the bite out of the jerk, but leaves in the flavor adding a hint of sweetness. Great for marinading shrimp and veggie cabobs.

Marinate sliced pineapple, sliced red onion, Delight Soy patties (or chicken), teriyaki sauce, 1 clove garlic diced, and a dash of crushed red pepper for 6-12 hours. Grill the pineapple rings, soy patties (or chicken) and red onion. Serve on a whole wheat bun with vegenaise/mayonaise or just as is on a plate with some sides.

Pineapple Pudding 1 stick butter 3/4 cup sugar 4 eggs 2 cups of pineapple 4 slices of bread, cubed Cream together the butter and sugar. Add the eggs, one at a time. Add the pineapple and bread, combining gently to coat. Bake at 350 degrees for 45 minutes. Enjoy!

one half cup fresh pineapple, one half cup fresh berries, 1 cup apple juice, 1/2 cup fat free yogurt, 1 t honey and flaxseed oil. blend in blender drink on ice and enjoy!!!! fresh pineapple is great to enjoy on your back deck and very healthy source for your internal body!!!!

2 cups fresh pineapple 1 tsp. ground fresh ginger 1/2 cup chopped onion 1 clove minced garlic 1/4 cup honey 1 cup chopped fennel Uncooked chicken-marinade in salt, pepper, 1/4 tsp. cayenne for 1 hour and then grill. Saute onion, garlic, fennel and ginger in frying pan with a slight amount of oil, pam or butter. As vegetables are just beginning to get soft, add the honey. As honey warms and coats vegetables, quickly add pineapple and fold in for just a minute or so. Great over grilled chicken. Enjoy.
