But in case you don’t win that, here’s another one for you: a pineapple recipe challenge! Fresh pineapple is downright delicious in all kinds of recipes from salsas and salads to smoothies and sandwiches. Whether it’s sharing a family favorite or creating something new and exciting, we want to know what you like to make with fresh pineapple. Now, here’s the challenge: your recipe needs to feature fresh pineapple and no more than five other ingredients. We want these recipe ideas to be fabulous and simple. * 1 cup finely chopped fresh pineapple * 2 tablespoons finely chopped purple onion * 1 tablespoon finely chopped red bell pepper, optional * 1 tablespoon finely chopped fresh cilantro * 1 tablespoon honey * 2 teaspoons finely minced jalapeno pepper, optional * juice of 1 fresh lime, about 1 1/2 to 2 tablespoons * 1/4 teaspoon black pepper Preparation: Combine all ingredients; cover and refrigerate for an hour or more to blend flavors. Serve with grilled or broiled fish, chicken, or pork. Makes about 1 1/3 cups.

Summer Nachos: Spread an even layer of tortilla chips (I like the strips or a multi-grain variety) on a large baking sheet. Top with diced fresh pineapple, black beans, chopped onion, diced fresh tomatoes, diced green bell pepper and freshly-shredded sharp cheddar cheese (not the dry, pre-packaged variety). Place under a broiler until the cheese melts, remove and sprinkle with chopped scallions. Serve with sour cream, salsa, black bean dip or your other favorite dip if desired. The salty-sweet combination is delicious!

Pineapple Sherbet Ingredients * 1/2 fresh pineapple, peeled and diced (about 1 cup) * 3/4 cup sugar * 2 tablespoons water or pineapple juice * 2 tablespoons lemon juice * 1 teaspoon lemon zest * 1 quart buttermilk Directions In a small heavy bottomed saucepan over medium heat, add the pineapple, sugar, water or pineapple juice, lemon juice and zest. Stir just until sugar melts. Let cool to room temperature. Transfer pineapple mixture to a food processor, with 1 cup buttermilk. Puree until smooth. With the motor running, gradually add remaining buttermilk, until smooth and well blended. Pour into a freezer-safe dish and place in the freezer. Freeze until firm, at least 2 hours. Eat and enjoy!

1 whole pineapple 4-6 Iowa Cut Pork Chops 1/4 onion 3 Tbsp brown sugar 1/4 cup golden raisins 1/4 cup Captain Morgan Spiced Rum Core, peel and slice into large rings one whole pineapple. Grill 4-6 slices turning half way. Grill 4-6 Iowa Cut Pork Chops. Put in blender or processer: 1-2 pineapple rings and 1/4 cut onion and pulse into a salsa-like consistancy. Put salsa in sauce pan, add 1/4 cup golden raisins, 3 Tbsp brown sugar and 1/4 cup of Captain Morgan Rum. Bring to boil and remove from heat. Plate pork chops with 1 ring pineapple on top and ladle saucepan contents on top. Serve with grilled veggies or a fresh green salad.

Pineapple duck curry 1 cup - small chunk fresh pineapple 1 full duck breast (pre-cooked and shredded) 1 14 oz can coconut milk 1 TBSP- red curry paste 1/4 lb snow peas 6 large basil leaves-coursely chopped Prepare duck breast (roast or pan cook just like a chicken breast) let cool, remove skin and shred breast meat Heat coconut milk in a medium to large skillet- add curry paste and sno peas and cook for 5 minutes. Add duck and pineapple and cook another 5 minutes- add basil at the end and serve over rice

My Grandma made this several times a week. Cottage cheese and pineapples. Just cut up pineapple and a bowl of cottage cheese. So so yummy! It's the only way I can eat pineapple without serious heartburn!

Grilled Pineapple 1 Fresh Pineapple, cut into rings 2 T. butter 1 C. brown sugar Sprinkle just a bit of the brown sugar over one side only of pineapple rings. Place on warm grill - medium heat. Melt butter and remaining brown sugar in small saucepan until completely incorporated and bubbly. Brush this on pineapple rings and turn frequently. Grill approximately 2 minutes per slice. Now enjoy your dessert!

Simple Grilled Pineapple -1 fresh pineapple -3 pieces crystalized ginger -1 garlic clove -1/2 cup soy sauce -1/4 cup brown sugar Finely chop garlic clove and crystalized ginger mix with soy sauce and brown sugar. Cut pineapple in half, cross hatch the flesh,cover with soy sauce mixture, marinate 20 minutes, place on heated grill flat side down on top rack, cook about 15 minutes, cool slightley and slice chunks off.

Pork Tortillas with Mango Pineapple Salsa Ingredients: 2 large mangos, seeded, peeled and cut into small chunks 1 small pineapple, peeled, cored and cut into small chunks 1 red onion, minced fine and divided 1 bunch fresh cilantro, chopped and divided juice from 3 limes, divided 3 pounds ground pork Serve with tortillas and shredded monteray jack cheese. Directions: Make salsa by combining mango, pineapple, 1/2 cup of the cilantro, 1/2 of the onion and 1/2 of the lime juice. Set aside. Heat enough oil in a large skillet over medium high heat so that it swirls and coats the pan. Add the remaining onions and cook until soft. Add in pork and continue to cook until no longer pink. Season with salt and pepper. Remove from the heat. Add in remaining cilantro and lime juice. Check mixture and add more salt and pepper if needed. Heat tortillas in the microwave for 45 seconds. PLace meat mixture in tortilla and top with cheese and mango pineapple salsa.

HOMEMADE HAWAIIAN PINEAPPLE SORBET - Sooo easy! Tear off top, remove rind and eyes, cut up and remove core. In a food processor (or blender) place pineapple, one cup at a time, and puree. Add juice of one whole lemon, and sugar (1/4 cup at a time). Some pineapples are very sweet so very little sugar is needed. Process or blend until smooth and creamy. Adjust for personal taste. Put contents in freezable container and freeze for about 4 hours or more. Scoop out frozen sorbet, place in processor or blender and whirr to mix and soften. Not too long. ENJOY! Serve with Kona Coffee Macadamia Nut cookies. Yummy.

Pineapple Salsa: 1 pineapple small diced 2 sml dice jalapeno remove seeds 1 sml diced red onion 1 sml diced red pepper, 1/2 tsp honey 2 limes juice salt & pepper Mix all the ingredients in a bowl, let it macerated for at least half and hour in the fridge. This can be serve as a side with chicken, fish, or pork.

Pineapple Cream Cheese Muffins Ingredients: - 225g plain flour - 2 tsp baking powder - 1/2 tsp salt - 100g sugar - 125g of cream cheese - 1 egg - 150ml 2% milk - 120ml sunflower oil - small, fresh pineapple chopped into small pieces 1. Preheat oven to 200C. Line 9 holes of muffin tray with paper muffin cases. Sift the flour, baking soda and salt into a large bowl and mix in the sugar. 2. In a medium bowl stir the cream cheese and egg with a wooden spoon, then gradually add the milk until creamy. Whisk in the sunflower oil with a fork. 3. Make a well in the centre of the flour and pour in the creamed mixture. Mix briefly until the flour is combined. Then stir in the chopped pineapple. Spoon even amounts of the mixture into each muffin case so the mixture comes almost to the top. 4. Bake in the oven for 20 - 25 minutes, or until cooked and golden. Leave in muffin tray for 15 minutes, then tip out and cool on a wire rack.

Pineapple Tropical Salsa 1 pineapple, peeled and cubed 1 - 2 manila mangoes, peeled, seeded and cubed (optional) 1 can of black beans, drained 2 -3 tbsp. of chopped red onion 1/2 tsp - 1 tsp of chili sauce juice of 1 lime bunch of cilantro chopped fine 1 roma tomato, seeded and cubed (optional) 1 avocado, cubed (optional) Combine all the ingredients and chill for 2 hrs. Serve with seafood. Yummy :).

Pineapple Baked Beans 2 cups black beans, dry   1 medium onion, chopped 1/4 cup ketchup 1 tablespoon rice vinegar 2 teaspoons worcestershire sauce 1 cup fresh Pineapple, chopped finely   add more pineapple to top off dish Soak black beans in large pot by adding eight cups of water, bringing it to a boil for 2 minutes, and letting beans sit with lid on for one and a half hours. Drain, but save water, and then place beans back in pot with 3 and a half cups of saved water, bring to a boil and reduce heat to medium. Meanwhile, sauté onion in skillet and add to pot with lid on top. Combine  ketchup, rice vinegar, and worcestershire sauce into beans. Continue to cook on medium to low heat until, stering intermittently, for about 1 and a half to 2 hours until beans are cooked and sauce is reduced. Mash a few beans with potato masher until desired consistancy then salt and pepper to taste if desired. Finally, remove beans from heat and add finely chopped pineapple to beans. Serve with small pineapple chuncks topped on a cup full of beans. Enjoy this extremely low fat, high fiber, high protein, low priced, vegetarian and delicious meal for 4-6.

* Scallops * 3 plum tomatoes, chopped * 1 package fresh shelled edamame * 2 cups fresh pineapple, cut into bite-size pieces * ½ red onion, chopped * 4 garlic cloves, minced Heat a large pan to medium-high, add olive oil and garlic and sauté for about a minute. Add the edamame, pineapple, tomatoes, and onion. Stirring occasionally, sauté for about 10 minutes on medium. Add S/P to taste. Remove from heat, and using a slotted spoon, remove to a bowl – keep warm. 3. Discard juices from pan and wipe clean. Add olive oil and return to medium heat. Cook your scallops on medium, about 2-3 minutes per side until opaque throughout. Season with S/P as you cook. 4. Serve with rice and garnish with cilantro and citrus slices.

My favorite pineapple recipe: Take one ripe pineapple and cut into small pieces, put in the blender with ice cubes and sprigs of fresh mint. Blend for a few minutes and you will have the most refreshing pineapple crush.

Pineapple and Papaya Blend This is a very natural and refreshing juice.In Peru, people have this smoothie as a natural juice for breakfast. 1 pineapple 1 papaya Honey Ice cubes Water Directions Cut off the top and the bottom of the pineapple. Stand the pineapple on its side and cut the skin off of the sides. Cut the pineapple on slices. Taking a slice firmly, begin cutting around the core. Take out the core. Cut the pineapple in cubes. Cut the papaya in a half. Remove the seed inside the papaya. Peal off the skin of the papaya. Cut into cubes. Place equal quantity of papaya and pineapple in a blender, add water, some honey and ice cubes. The quantity of honey depend on how sweet do you like. The quantity of water depend on how liquid do you want your drink. Blend all for 2-3 minutes, until all the ingredients are blended. Use a strainer to separate some divits left. Ready to serve.

1/4 Cup White wine (sweeter is best) 1/3 Cup Golden Raisins 1 Tbl Sugar (or sweetener) One pinch of finely ground cayenne 1 Whole pineapple, Cleane, Cored & Cut into smallish pieces (about 1 - 1/1/2 inches max) 1 small container of blackberries (can use other berries, but blackberries hold up best) In a bowl big enough to hold everything, Soak Raisins in wine until they are plump. Add Sugar and cayenne. Stir well to dissolve the sugar (don't let the cayenne clump up). Add the pineapple and berries and gently stir to coat all fruit with liquid. (Can adjust sugar/sweetener & cayenne to taste.) Stir often as you are serving it, so that each portion gets some liquid and some raisins.

I make a fresh salad with a whole pineapple cut up and put in a food processor with a package of cranberries. process until chunky. mix these ingrediants with either 1/2 cup of fresh grapefruit juice or orange juice. add enough sugar to taste. you may add 1 tsp. orange liqueur. I garnish it with mint. enjoy!!! It is great with ham, turkey or anything festive. I eat it by itself for a refreshing side dish.

Pineapple Waldorf Salad 2 organic granny smith apples cored & cubed 4 stalks organic celery diced 1 cup whole trade pineapple cubed ½ cup dried tart cherries 1 7.5 oz container crème fraiche ½ cup orange blossom honey Combine fruit & toss to coat with crème fresh & honey mixture. Place fruit mixture over a bed of mixed greens.

Pineapple Appetizer Cut up a whole pineapple into quarter wedges, Then make small individual cuts into pineapple but leaving it in the wedge with skin and all. Finally, put a half of a maraschino cherry on a toothpick and stick it into each individual bite size piece. Simple but Sweet!!
