Pineapple Floats When I used to work at Disney World at Aloha Isle in the Magic Kingdom, we served pineapple floats made out of Dole pineapple juice and Dolewhip (a non-dairy based frozen treat only sold at Disney World and the Dole factory in Hawaii). I re-created my own with fresh pineapple juice and scoops of vanilla ice cream. Adds fresh chunks of pineapple and chocolate syrup for somthing extra special. Serve in a chilled mug with a straw, spoon, and cocktail umbrella.

"Oven Roasted Ham and Pineapple" l cooked spiral Ham, l can of pineapple rings, 10 dried cloves, l jar of star cherries, l tspb of white flour l reynolds bag l oven tray toothpicks Prepare Ham, insert all cloves around the top and side of Ham, insert l toothpick in one cherry and insert it on the face of the Ham with one ring of pineapple do all over the face and the top of the Ham, take the juice from the can of pineapple and put all over the Ham, make six little cuts with a knife on the reynolds bag, place a tsbp of white flour in the bag and shake it, place the Ham inside the bag and place the Ham on the oven tray, cook for about 2 hours at 350 degrees. Try it you will have the best tasting Ham of all time.

Simplicity at it's finest. Fresh pineapple cored and cut length wise into thin quarters Sprinkle with a little sea salt and grill. Plate and drizzle with ginger syrup and wildflower honey. Garnish with edible flowers. Made this the other night all with products from WF. Amazing.

Jerk Chicken Sandwich 1 Chicken Breast 1 roll Multigrain Sandwich Roll 1 cup of White Cabbage 1 Tblspoon of Honey 2 tablespoons Mustard, Spicy Brown tspn Mayo Fat Free tspn 100% Lime Juice tbsp Ginger Root Sweet Potato slices of Pineapple Top chicken with Carribean jerk seasoning, and grill. Slice the sweet potato into discs, and grill on low heat until cooked thoroughly. Season with salt and pepper. Grill the pineapple slices until slightly charred on both sides. Combine mayo, mustard, lime juice, honey, and ginger and whisk together to form a dressing. Add sliced cabbage and toss. Toast sandwich thin, place pineapple slice and sweet potato on bun, and top with slaw mixture, chicken, and sliced red onion.

Flirtini Ingredients: 2 pieces fresh pineapple 1/2 oz Cointreau 1/2 oz vodka 1 oz pineapple juice 3 oz Champagne maraschino cherry for garnish Muddle the pineapple pieces and Cointreau in the bottom of a mixing glass. Then add the 1/2 oz of vodka with your pineapple juice. Stir well. Strain into a chilled cocktail glass (tall glasses work best) Top with Champagne. Garnish with the maraschino cherry or piece of pineapple. Drink and Enjoy!

Frozen CocoNapple Juice Bars Ingriedients: Freshly cut, Big Pinapple chunks Fresh, Squeezed Orange Juice and pulp (directly from the Orange) not processed in any way. Shaved Coconut 1/4 bottle of coconut extract/flavor You're going to need to core a fresh pineapple and chop it into nice sized chunks. Squeeze 4 to 6 cups of fresh orange juice or buy it from your local fruit shipping company (if you live in FL). Put those both into a blender/food processor. Grab two handfuls of shaved coconut and sprinkle in. Add coconut extract/ flavor and blend for 6 seconds or process for 2. Pour mixture into Ziplock bags, close firmly and freeze! In just a few hours you can snip the tops of the plastic and enjoy your frozen CocoNapple TREAT! YUMTYSHANKADOODLE!

Great childhood memories of this one..great on any day with some yellowtail chardonnay 1lb skinless chicken breasts 1 20oz can of pineapple slices (can use less or more depending on the size of the chicken breasts) Mayonnaise to taste (DO NOT USE SUBSTITUTE) Cut chicken breasts about 3/4 inch thick portions. "Beat them" as my mother says. The longer you do this, the more tender the chicken will be and the more juices will get absorbed. Then, apply a generous amount of mayo to the chicken on all sides. Finally, put a desired amount of pineapple slices on top and cover them with mayo. Put on lightly greased pan (the mayo is great grease as it is) and bake at 425 until chicken is fully cooked. The baked mayonnaise is delicious, so feel free to pick some off the cooled pan for yourself ;)

Grilled Chicken Pineapple Sandwiches 1 fresh pineapple 6 chicken breasts 6 slices pepper jack cheese 1 avocado 1 Tbsp. cumin 6 whole grain kaiser rolls Preheat outdoor grill to medium. Remove any fat from chicken then season with cumin. Place on grill until cooked through (no pink juices). Remove outer skin from pineapple and core. Cut into 1/4" slices. Place on grill about 5 minutes, turning once. Mash avocado and spread evenly over one half of the kaiser rolls. Place grilled pineapple on chicken and cover with slice of cheese. Then place on each of the kaiser buns.

Pineapple Stuffing (goes great with ham!) Crush about 20 oz of pineapple, mix with 1/2 cup sugar or Splenda and 4 beaten eggs. Break up 5 slices bread into 1/4 pound melted butter. Combine all and put in greased 2 qt. casserole dish. Sprinkle top with cinnamon/sugar. Bake 1 hour at 350. Serve hot or cold.

Simple Stir Fry 3 cups prepared brown rice 1 can black beans, drained and rinsed 1 cup fresh pineapple, but into bite-sized pieces 6-7 stalks fresh green asparagus, but into bite-sized pieces 1 small onion(any variety), diced 2 Tbsp garlic infused olive oil Heat olive oil in wok(or skillet)to a medium-high temp, add onion, asparagus, and pineapple, stir frequently for about 1 minute, add black beans and rice and stir continuously for another minute or to desired temperature. Season to your liking. Super easy and full of flavor. Guaranteed to be a hit!

I like to combine fresh pineapple cut into chunks, as much of the juice from the pineapple as I can catch when cutting it, barbecue sauce, and boneless skinless chicken cut into strips or bite sized pieces. I make the mix to taste, and bake until the chicken is cooked. I serve it with white rice cooked with sliced red bell pepper, and veggies. Makes for a great, easy, meal!

Marinated Grilled Pineapple Spears Simple, delicious, elegant, versatile and always a winner! 1 Whole Trade pineapple - cored and cut into spears 1/4 c real maple syrup 1/4 c balsamic vinegar 1 T cold-pressed sesame oil Combine all ingredients and allow to marinate for 2 or more hours (prep these in the morning to enjoy at an afternoon or sunset gathering) Grill on med-high for 3-4 minutes, flip, grill 3-4 more minutes, remove and enjoy the juicy flavor burst. These marinated grilled pineapple spears are terrific served with almost any bbq'd meat or fish, provide a great addition to a grilled veggie dinner, a yin-yang sensation alongside sushi, or a hit by topping ice cream with warm spears for a special dessert. Pineapple Casserole 1 cup margarine 2 cups sugar 4 eggs beaten 1/4 cup milk 4 cups white bread crumbs 2 1/2 cups of fresh crushed pineapple Cream margarine, sugar, milk, and eggs. Add in bread crumbs and pineapple and mix well. Place in a pyrex dish sprayed with cooking spray. Bake at 375 degrees for 15 min then lower heat to 350 degrees, and bake another 45 mins- 1 hour.

Roasted Pineapple with Thyme-Ginger Ice Ingredients * 1 teaspoon thyme leaves, plus small sprigs for garnish * 2 bottles, 12 ounces each, ginger beer or all-natural ginger soda * 1 whole pineapple, peeled, eyes removed, and sliced into 8 even slices * Vegetable oil * 1 tablespoon sugar * Kosher salt Directions Scatter the thyme leaves among the compartments of 2 large ice cube trays. Fill the trays with ginger beer and freeze at least 6 hours and preferably overnight. Preheat the oven to 400 degrees F. Put the pineapple slices on a nonstick baking sheet. Brush both sides very lightly with vegetable oil and sprinkle them evenly with the sugar; sprinkle very lightly with salt as well. Roast in the oven for 20 minutes. Remove from the oven and flip the slices. Put in the oven and continue roasting until they are golden, about 10 minutes more. Remove from oven and cool slightly in the pan. Transfer the ginger beer ice cubes to a food processor and pulse until broken down and fluffy. Transfer to a small cake pan or baking dish. To serve, put 2 slices of warm pineapple on each dessert plate; top with a scoop of ginger ice and garnish with a small sprig of thyme. Note: If not using the ginger ice immediately, refreeze. To loosen it, scrape with a heavy fork until fluffy. Ginger beer is very spicy and the spiciness is enhanced when frozen. For milder ice, use natural ginger ale or ginger soda.

LAMB WITH PINEAPPLE LAMB SAUCE Ingredients * 2 whole racks of lamb (8 chops each), about 2 pounds, frenched * Kosher salt and freshly cracked black pepper * 3 tablespoons extra-virgin olive oil, divided * 1 fresh pineapple, peeled and cored * 2 garlic cloves, minced * 1 small bunch fresh mint, tied with kitchen string, plus 1/4 cup leaves, finely chopped * 1/2 cup water Directions Preheat the oven to 375 degrees F. Trim any excess fat on the lamb racks and season, to taste, with salt and pepper. Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat and put the racks in the hot pan, fat side up. Sear until browned, then flip and sear on the fat side until golden brown. Stand the racks up in the pan, criss-crossing the bones with the fatty side out. Put the pan in the oven to roast until the internal temperature reaches 130 degrees F on an instant-read thermometer, about 15 to 20 minutes. Remove the pan from the oven and let the lamb rest on a cutting board for at least 5 minutes. Slice into single or double chops (2 rib bones). To make the sauce, finely chop the pineapple, reserving any juices that are released (it should resemble canned crushed pineapple). Heat the remaining 1 tablespoon of olive oil in a saucepan over medium heat. Add the garlic and cook until softened, 2 to 3 minutes. Add the pineapple and its juice, the mint bundle and water to the saucepan and simmer over low heat until the pineapple is broken down and the liquid has thickened, about 40 to 45 minutes. Remove the mint bundle and discard; stir the chopped mint into the sauce and transfer to a serving bowl. Serve the lamb chops on a platter topped with the pineapple mint sauce spooned over the top.

I loved eating this as a kid my mom used to make it all the time with fresh pineapple when it was in season.It can be made with canned pineapples when not in season. all you need is 1)one freshly cut pineapple into small cubes 2)2-3 cloves and 1cinnamon stick 4) butter 2 tablespoon of melted butter 5)sugar 3-4 tablespoon sugar. In a pan add the butter when hot don't let the butter get too hot it might just burn , add the cloves cinnamon saute for about one minute then add the pineapple pieces , sugar and some little water, if canned is being used used some of the syrup and lessen the quantity of sugar by 1 tablespoon. after the water is added cover with the lid and let it cook for about 5-7 minutes. when done let it cool put it in the fridge and serve it with some whipped cream or it can be eaten the way it is , I personally like it more with whipped cream.

This recipe sounds strange but don’t knock it until you try it. 3 ingredients 2 minutes of prep time about 10 minutes of cook time Serves 4 1 Package of Wide Egg noodles (12-Ounce Bag) 1 Cottage cheese (16-Ounce) 1 Pineapple cut into chunks (fresh is better but if you need to go with canned then use one 16-Ounce can) Follow boiling instructions for Egg noodles, once egg noodles are cooked drain water (do not use cold water to cool off noodles you want them warm) mix in Cottage Cheese & Pineapple over cooked egg noodles.

Pineapple and quinoa salad: 2 cups quinoa 1/2 Chopped fresh pineapple 1/4 cup sultana raisins 1/4 tsp fresh grated ginger 1 Lemon squeezed for juice and zested 1 tsp. Agave syrup 1. Marinate pineapple and raisins with ginger, lemon juice, zest and agave syrup in a large bowl. 2. Rinse quinoa, drain and cook until firm. 3. When quinoa is cool, add to bowl and mix well. 4. Serve lukewarm and enjoy!

This one is great with bbq season starting. All you need are enough whole bananas for everyone, some chocolate of choice, some pinapple chunks and foil. Slit each banana along the long side, stuff with each person's favorite chocolate and pinapple chunks and wrap each in foil. Place on grill or directly into coals and bake about 15-20 minutes. Check for doneness- if skin is black they are ready. The banana and pineapple will have softened and the chocolate will be melted and it combines to make a 'healthy' treat.

Poached Salmon in White Wine with Pineapple .............................................. - 4 small salmon filets - 1/2 cup dry white wine - 1/4 cup water - 1/2 cup finely cubed fresh "Whole Trade" pineapple - fresh dill - salt and pepper to taste -- Bring to simmer wine and water in a pan. Season salmon with salt and pepper and place in the poaching liquid. Cover and cook 5 minutes (or less -- check filets for doneness). Uncover, top with pineapple and sprinkle with dill. Re-cover and let steam 2-3 minutes. Serve with rice and cucumber salad.

Grill fresh pineapple slices on the BBQ. Roast corn kernals in the oven. Mix the two together with golden raisins. Drizzle with a very good, sweet balsamic vinegar. I call it the Charlie Brown. The squiggles of balsamic on the yellow corn, pineapple and raisins reminds me of Charlie Browns shirt. Its one of my favorite healthy summer snacks and combines all of my favorite foods!

Pineapple really hides the taste of the vegetables in my smoothies. I put this in a powerful Vitamix blender to keep all the nutrients and fibers. Green Smoothie 2 or 3 large leaves of Swiss Chard or kale 1 carrot (with green tops if desired) half a pineapple or to taste frozen blueberries or any other berries flax seeds (optional) water to desired consistency Sweeten with stevia or other natural sweeteners if desired but I find the pineapple does the trick. Blend until smooth. Drink within the day for optimum nutrition.

Pineapple and Steak Sandwich Seasoning Mix: mix 2 tsp kosher salt, 1 tsp pepper, and 4 tsp cumin 1 beef fillet, sliced into 1/2 inch slices 6 slices of fresh pineapple, about 1/2 inches thick Chevre Favorite bread, sliced (I like French) Olive oil (flavored olive oils are also nice for this) Sprinkle beef liberally with kosher salt, ground pepper, and cumin Seasoning Mix. Set aside. Brush olive oil on each side of bread slices set on an oven sheet. Bake, turning once, until each side is golden brown. While bread is toasting, pan sear the beef on high heat with 1-2 tablespoons of olive oil until desired doneness (best in a cast iron skillet, and I prefer medium/medium rare, usually takes a minute or less per side). Set beef aside on a plate to rest. Pan sear pineapple slices on high heat until hot and sugars slightly caramelized on outside. Sprinkle with extra seasoning mix if desired. Assemble sandwich by spreading chevre generously on the toasted bread slices, then stacking on beef and pineapple slices to fill out the sandwich. The number of sandwiches this makes depends on how big your bread slices are and how fat you like your sandwiches.

I've got a simple yet unexpected recipe. Simply put...pineapple and chili sauce. I prefer Sambal Oelek ground fresh chili paste. It is the perfect combination of sweet and spicy. Delicious.

Pineapple Souffle 1 cup sugar 1 stick butter 4 eggs 6 slices of bread 20 oz. can crushed pineapple 1. Preheat oven to 350. 2. Prepare baking dish (Pam cooking spray). 3. Cream together sugar and butter. 4. Beat four eggs into sugar and butter. 5. Remove crust from bread slices and tear into bite-sized pieces. 6. Add (stir/fold) bread to egg, sugar, butter mixture. 7. Add 20 oz can crushed pineapple (including juice). 8. Bake for one hour. Serve warm.

Chocolate Pineapple Dessert Once you have cut the outter skin off your pineapple, core it, and cut it into round slices. Sprinkle cinnamon and brown sugar on both sides of pineapple. Place pineapple rounds on a hot grill and cook long enough to have slight grill marks. This will only take a few minutes. Turn them over so both sides have marks. In a bowl, take chocolate (I like approx. 70% cocoa) and melt it in a double boiler. Add about a tsp of orange liquor and a tsp of vanilla and a tsp of cinnamon. Stir it all together. Either dip the pineapple circles in and let them cool or use the chocolate as a fondue dish and enjoy!

Sweet Potatoes with Pineapple and Apples Thinly sliced sweet potatoes, peeled Thinly sliced apples, peeled Bite-size (like tidbit size) pineapple pieces Use approximately equal parts (1 potato per person) and layer slices of sweet potato, apple, and pineapple pieces in deep casserole dish (or crockpot), ending with sweet potatoes on top. Sprinkle with cinnamon, if desired. Bake at 350 for 1 hour or more, until VERY tender, or all day on low in the crockpot. A family favorite!

Chicken Cutlets With Fresh Pineapple Sauce Ingredients: 4 Boneless Chicken Breasts, 6 slices 365 Brand Touch of Honey Wheat Bread, 1 1/2 cup chopped fresh pineapple, ground coriander, 4 tsp. organic sugar, 365 Organic Olive Oil for frying. Pound chicken breasts between two pieces of plastic wrap until thin. Tear bread in half and place into food processor. Process until bread turns into crumbs. Pour crumbs onto large plate. Season with salt and pepper if desired. Dip each chicken breast into the crumbs, then put on a separate plate to rest. Chop up 1 1/2 cups of pineapple. Place into bowl. Mix in a few dashes of ground coriander and 4 tsp. organic sugar (can skip the sugar if you want). Heat olive oil in a non-stick pan. Saute chicken breasts until browned on both sides, and until they are no longer pink in the middle. Remove from pan and place on serving plate. Set the heat to low, and add the pineapple mixture to the frying pan. Heat through for 3 minutes. Remove from pan. Serve cutlets with pineapple sauce on the side. Yummy!!!

Pineapple Sammy Serves 2 4 slices of Raisin Bread, toasted 1 tomato, sliced 1 small cucumber, sliced thin 4 Tb cream cheese 2-4 fresh pineapple slices Prepare fruits and vegetables, toast bread. Spread cream cheese on each slice of toast, assemble sandwich: 1-2 slices of each pineapple, tomato, slices cucumber. Eat cold or at room temperature. Left over tomato, cucumber, and pineapple are great chopped into a salad.
