I've got a simple yet unexpected recipe. Simply put...pineapple and chili sauce. I prefer Sambal Oelek ground fresh chili paste. It is the perfect combination of sweet and spicy. Delicious.

Pineapple Baked Beans 2 cups black beans, dry   1 medium onion, chopped 1/4 cup ketchup 1 tablespoon rice vinegar 2 teaspoons worcestershire sauce 1 cup fresh Pineapple, chopped finely   add more pineapple to top off dish Soak black beans in large pot by adding eight cups of water, bringing it to a boil for 2 minutes, and letting beans sit with lid on for one and a half hours. Drain, but save water, and then place beans back in pot with 3 and a half cups of saved water, bring to a boil and reduce heat to medium. Meanwhile, sauté onion in skillet and add to pot with lid on top. Combine  ketchup, rice vinegar, and worcestershire sauce into beans. Continue to cook on medium to low heat until, stering intermittently, for about 1 and a half to 2 hours until beans are cooked and sauce is reduced. Mash a few beans with potato masher until desired consistancy then salt and pepper to taste if desired. Finally, remove beans from heat and add finely chopped pineapple to beans. Serve with small pineapple chuncks topped on a cup full of beans. Enjoy this extremely low fat, high fiber, high protein, low priced, vegetarian and delicious meal for 4-6.

Pineapple Souffle 1 cup sugar 1 stick butter 4 eggs 6 slices of bread 20 oz. can crushed pineapple 1. Preheat oven to 350. 2. Prepare baking dish (Pam cooking spray). 3. Cream together sugar and butter. 4. Beat four eggs into sugar and butter. 5. Remove crust from bread slices and tear into bite-sized pieces. 6. Add (stir/fold) bread to egg, sugar, butter mixture. 7. Add 20 oz can crushed pineapple (including juice). 8. Bake for one hour. Serve warm.

* Scallops * 3 plum tomatoes, chopped * 1 package fresh shelled edamame * 2 cups fresh pineapple, cut into bite-size pieces * ½ red onion, chopped * 4 garlic cloves, minced Heat a large pan to medium-high, add olive oil and garlic and sauté for about a minute. Add the edamame, pineapple, tomatoes, and onion. Stirring occasionally, sauté for about 10 minutes on medium. Add S/P to taste. Remove from heat, and using a slotted spoon, remove to a bowl – keep warm. 3. Discard juices from pan and wipe clean. Add olive oil and return to medium heat. Cook your scallops on medium, about 2-3 minutes per side until opaque throughout. Season with S/P as you cook. 4. Serve with rice and garnish with cilantro and citrus slices.

Chocolate Pineapple Dessert Once you have cut the outter skin off your pineapple, core it, and cut it into round slices. Sprinkle cinnamon and brown sugar on both sides of pineapple. Place pineapple rounds on a hot grill and cook long enough to have slight grill marks. This will only take a few minutes. Turn them over so both sides have marks. In a bowl, take chocolate (I like approx. 70% cocoa) and melt it in a double boiler. Add about a tsp of orange liquor and a tsp of vanilla and a tsp of cinnamon. Stir it all together. Either dip the pineapple circles in and let them cool or use the chocolate as a fondue dish and enjoy!

Scalloped Pineapple. 1cup sugar 1 cup soft butter 2 1/2 cup fresh pineappple ( finely chunked) 3 eggs 7 or 8 slices whole wheat bread finely torn 2 tablespoons milk Cream together sugar and butter,add pineapple and any juice it made. Fold in 3 eggs beaten & bread put in 9x13" pan sprinkle with milk and bake about 45 min uncovered in 350 degree oven.

(or more) pineapple cubes broiled, salted sweetener of choice - treacle syrup, honey, agave, stevia, brown sugar I like to broil the Heart thrive and light salted pineapples. Sometimes I will toast the nuts and coconut too. I mix the yogurt with the treacle syrup, nuts, coconut, and pineapple, then crumble the Heart thrive on top. And enjoy! From the name I have this for breakfast but I have even made it for a snack or dessert.

I haven't seen this one yet. Sweet Potatoes with Pineapple and Apples Thinly sliced sweet potatoes, peeled Thinly sliced apples, peeled Bite-size (like tidbit size) pineapple pieces Use approximately equal parts (1 potato per person) and layer slices of sweet potato, apple, and pineapple pieces in deep casserole dish (or crockpot), ending with sweet potatoes on top. Sprinkle with cinnamon, if desired. Bake at 350 for 1 hour or more, until VERY tender, or all day on low in the crockpot. A family favorite!

Chicken Cutlets With Fresh Pineapple Sauce Ingredients: 4 Boneless Chicken Breasts, 6 slices 365 Brand Touch of Honey Wheat Bread, 1 1/2 cup chopped fresh pineapple, ground coriander, 4 tsp. organic sugar, 365 Organic Olive Oil for frying. Pound chicken breasts between two pieces of plastic wrap until thin. Tear bread in half and place into food processor. Process until bread turns into crumbs. Pour crumbs onto large plate. Season with salt and pepper if desired. Dip each chicken breast into the crumbs, then put on a separate plate to rest. Chop up 1 1/2 cups of pineapple. Place into bowl. Mix in a few dashes of ground coriander and 4 tsp. organic sugar (can skip the sugar if you want). Heat olive oil in a non-stick pan. Saute chicken breasts until browned on both sides, and until they are no longer pink in the middle. Remove from pan and place on serving plate. Set the heat to low, and add the pineapple mixture to the frying pan. Heat through for 3 minutes. Remove from pan. Serve cutlets with pineapple sauce on the side. Yummy!!!

Pineapple Sammy Serves 2 4 slices of Raisin Bread, toasted 1 tomato, sliced 1 small cucumber, sliced thin 4 Tb cream cheese 2-4 fresh pineapple slices Prepare fruits and vegetables, toast bread. Spread cream cheese on each slice of toast, assemble sandwich: 1-2 slices of each pineapple, tomato, slices cucumber. Eat cold or at room temperature. Left over tomato, cucumber, and pineapple are great chopped into a salad.

I love Whole Foods' Organic Whole Trade Pineapples! When they started to go on sale this spring, I decided to add them to my weekly shopping list and have used them daily for this delicious homemade juice recipe I designed. Its great at nourishing, replenishing, energizing, and stabilizing blood sugar.! I call it "Vitality Juice":) Heather's Vitality Juice 1/4 Whole Foods Organic Whole Trade Pineapple (skin removed) 1 organic zuccini 1 head organic romaine lettuce 1 organic lemon, peel removed 10 organic mini carrots 5 leaves organic red kale 1/2 a bunch of organic parsley 1 organic orange ( peel removed ) Process the pineapple, orange and lemon in a juicer. Scrape the pulp and set aside, leaving the juice in the juicing container. Process the zuccini, romaine lettuce, kale and parsley in the juicer. Pour the juice into a glass or glass bottle for future use. I like to put mine in the fridge for at least 30 minutes to get it cold or top it over ice fresh!:) Use the pulp by doing the following: Vegetable Pulp: toss well with your favorite spices and make a salad with and top with a red wine vinegar dressing, or mustard based dressing sprinkled with fresh minced garlic! I liked Simply Organic Herb and Garlic spice blend and Garlic Gold Italian Seasoned Gold Nuggets, both available at Whole Foods. Fruit Pulp: Stir well and mash. Add 1 ripe banana and mash if desired. Mix with 1 cup gluten free oats, 1 tsp. cinnamon, 1/4 tsp. ground ginger, 1/4 cup sliced organic almonds, 2 tbsp. Stevita brand stevia, and 1/4 cup flaxseed, milled. Stir well until a "dough" is formed. If you need to, add a little water to get a doughy consistency. Spoon out into small "cookie" drops and bake on a nonstick baking sheet in the oven for 20 minutes at 350 degrees for homemade cookies:) Yum!

Pineapple Empanadas: 1 cup of chopped fresh pineapple 1/2c brown sugar 1, 10ct. package of empanada discs (sold in the frozen ethnic section) 1/4 c oil (any kind) 1/4 c powdered sugar Add one 2t of pineapple in the middle of each disc and sprinkle with 1t brown sugar on top of the pineapple then fold over and crimp the edges. Add 1/4 to a medium frying pan to 350 degrees disc 1 minute on each side or until golden brown on each side. Remove and place each disc on a paper towel to absorb excess oil. Dust with powdered sugar before serving. Serve warm.
