Pineapple Salmon 1 cup of chopped fresh pineapple 2 individual slices of salmon 2 tablespoons of cilantro Marinate salmon pieces with 1/2 cup of pineapple for an hour Grill salmon with topped pineapple for 12 minutes wrapped in foil, flipping once In separate bowl mix 1/2 cup of chopped pineapple with cilantro Serve grilled salmon topped with pineapple and cilantro Enjoy your tropical meal!

I love Whole Foods' Organic Whole Trade Pineapples! When they started to go on sale this spring, I decided to add them to my weekly shopping list and have used them daily for this delicious homemade juice recipe I designed. Its great at nourishing, replenishing, energizing, and stabilizing blood sugar.! I call it "Vitality Juice":) Heather's Vitality Juice 1/4 Whole Foods Organic Whole Trade Pineapple (skin removed) 1 organic zuccini 1 head organic romaine lettuce 1 organic lemon, peel removed 10 organic mini carrots 5 leaves organic red kale 1/2 a bunch of organic parsley 1 organic orange ( peel removed ) Process the pineapple, orange and lemon in a juicer. Scrape the pulp and set aside, leaving the juice in the juicing container. Process the zuccini, romaine lettuce, kale and parsley in the juicer. Pour the juice into a glass or glass bottle for future use. I like to put mine in the fridge for at least 30 minutes to get it cold or top it over ice fresh!:) Use the pulp by doing the following: Vegetable Pulp: toss well with your favorite spices and make a salad with and top with a red wine vinegar dressing, or mustard based dressing sprinkled with fresh minced garlic! I liked Simply Organic Herb and Garlic spice blend and Garlic Gold Italian Seasoned Gold Nuggets, both available at Whole Foods. Fruit Pulp: Stir well and mash. Add 1 ripe banana and mash if desired. Mix with 1 cup gluten free oats, 1 tsp. cinnamon, 1/4 tsp. ground ginger, 1/4 cup sliced organic almonds, 2 tbsp. Stevita brand stevia, and 1/4 cup flaxseed, milled. Stir well until a "dough" is formed. If you need to, add a little water to get a doughy consistency. Spoon out into small "cookie" drops and bake on a nonstick baking sheet in the oven for 20 minutes at 350 degrees for homemade cookies:) Yum!

Pineapple Empanadas: 1 cup of chopped fresh pineapple 1/2c brown sugar 1, 10ct. package of empanada discs (sold in the frozen ethnic section) 1/4 c oil (any kind) 1/4 c powdered sugar Add one 2t of pineapple in the middle of each disc and sprinkle with 1t brown sugar on top of the pineapple then fold over and crimp the edges. Add 1/4 to a medium frying pan to 350 degrees disc 1 minute on each side or until golden brown on each side. Remove and place each disc on a paper towel to absorb excess oil. Dust with powdered sugar before serving. Serve warm.

Pineapple Coconut Smoothie 3 cups of fresh pineapple chunks 1 13.5 oz can of Coconut Milk (I prefer Hokan Coconut Milk Lite- very low fat & calories) 16 oz Stonyfield French Vanilla Organic Fat Free Yogurt (or any plain or french vanilla yogurt that is your favorite) Mix in a blender for a minute or until completely smooth. Fruit Salsa Recipe (w/pineapple) 3/4 c small diced pineapple 3/4 c small diced mango 1/2 c small diced strawberries 1/4 c small diced red onion 2 T chopped fresh mint leaves 2 T orange juice 1 T lime or lemon juice Combine & Mix all ingredients in a NON-metal bowl, stir to blend. Cover. Allow to sit for 20 to 30 minutes before serving. Makes about 2 cups.

Vegan Pineapple Soy Ice Cream You will need a blender and a ice cream machine for this recipe! Ingredients -8 ounces soy yogurt - 3/4 to 1 cup plain soy milk -1/3 cup maple syrup -2 tsp vanilla - 1 cup fresh pineapple Directions Combine all 4 main ingredients in a blender and blend until smooth. Blend in 1 cup of fresh pineapple.If you need more syrup for a sweeter taste, add accordingly. Pour into your ice cream machine, and freeze following the manufacturer's instructions. GREAT summer fresh recipe!

Pineapple skewers Cut up a whole pineapple and skewer it. Then roll one side in jello, whatever flavor you like, I prefer a red one. I think it just makes it nicer. Then eat! It is a simple and delicious desert!

Black Bean and Pineapple Salsa 2 cans Black Beans 1 cup diced pineapple 1/4 cup diced red onion 1/2 cup diced green pepper 1/4 cup fresh choppe cilantro Season with salt, pepper and lime juice to taste Mix all ingredients and let sit in the fridge overnight. Enjoy!

Tropical Chicken Dinner - light and refreshing on the grill in spring/summer! wrap fresh pineapple, red peppers and green onions in foil. Grill about 20 minutes, until peppers and onions are tender. Grill boneless, skinless breast or tenders (rubbed with a Jamaican Jerk rub) until cooked throughout. Serve cooked chicken over basmati or jasmine rice, and cover with pineapple mixture! Whole process takes 20 minutes at most - only 6 ingredients for a complete, delicious, meal!!

I made this recipe for summer when I was hosting a BBQ at my house. Ingedients: Salad 1 1/2 cup of diced pineapple (little chunks) Romain lettuce and Fresh Spinach (how much you like) 1/2 cup shrimp (grilled until done) 1/2 cup lump crab meat (you can get it in the can) 1/2 cup feta cheese crumbles Cilantro (lots) 1 avacado peeled and diced (little chunks) 1 mango peeled and diced (little chunks) Dressing: *Juice of 1 lime *Juice of 1 lemon *table spoon of pepper *wisk in about 1 half cup of Extra virgin olive oil Directions: Mix all salad ingredients together Make dressing and drizzle over your salad and you are done.

Pineapple Salsa 2 cups fresh pineapple finely chopped 1/2 red bell pepper finely chopped 1/4 red onion finely chopped 1/2 to 1 whole jalapeno seeded and finely chopped juice of 1/2 lime Mix together, let sit for 10 min to 1 hour for flavors to meld. Enjoy with chips or as a complement to grilled chicken or fish.

My best pineapple recipe: Pineapple Salsa 1/2 peeled fresh pineapple, core removed 1 fresh mango, peeled and seed removed 1/2 medium red onion 1 bunch cilantro, leaves only salt, to taste pepper, to taste 1/2 fresh poblano pepper (or other mild hot pepper), seeds and core removed, optional With a sharp knife, cube the pineapple, mango, and onion into very small pieces, approximately 1/4 inch cubes. Place into medium sized mixing bowl. Mince cilantro leaves then add to fruit. If adding fresh pepper, mince extremely small and add to mixture. Add salt and pepper, to taste. Mix and let sit so flavors develop, about 15 minutes. Serve cold.

Pineapple-Mandarin Orange Tilapia Fillets (SO EASY! TAKES ABOUT 30 MIN.TO PREPARE-AND IT'S GOOD FOR YOU!))) Ingredients: 1-1/4 lb.Tilapia Fillets (I got them right at Whole Food this week on sale!!!!; 4-slices of fresh pineapple,1/2 cup mandarin orange segments (drained), 1 Bottle of "S+F Chef Sauces (Mandarin Orange Sauce-found right at the Seafood Section of Whole Foods!!) 4 servings of long grain cooked rice with a a TAB. Ea minced red or green peppers and red onion to be mixed in with the white rice for presentation) Directions: Cook white rice; about 5 min before you plan to serve the rice with this dish, simply spray an electric skillet turned to 350 degrees (adjust according to your particular pan) drop 1 TAB unsalted butter in skillet and drop the pineapple slices ( or chunks if you prefer with orange segments and start browning them for about 5 min total.Push aside and add tilapia fillets and cook no more than 3-4 min on each side. Place rice on serving plate and then fish; top with some of the grilled pineapple and orange segments and drizzle with the S +F Mandarin Orange Sauce..The Organic Broccoli or baby carrots cooked (which I also purchased at Whole Foods!) is a Wonderful side dish with this!!!! Ham-Pineapple Pizza Fast and Sweetly Delicious!!! Ready-made Pizza Crust Pizza Sauce Ham Pieces Pineapple slices or chunks (canned or fresh) Sliced cooked Mushrooms (I use canned) Shredded Mozzarella Cheese Note: Most items can be found in the well-stocked Whole Foods Deli Department. Preheat oven to 425 degrees. Spread crust onto large pizza pan or you can use any large-sized sheet with sides. Cover with sauce (please note quantity of toppings is up to you!). Then top with ham pieces, pineapple, and mushrooms. Cover with shredded mozzarella cheese. Bake for about 20 minutes or until crust and cheese are golden. !!YUM!!

Gulf Shrimp with Sweet Fresh Pineapple Glaze 1/2 cup brown sugar 2 cups white wine vinegar 1/2 fresh pineapple, peeled, cored, and cut into forty 1/2-inch cubes 2 Tbsp Onion, minced 1 Serrano chili, seeds & ribs removed, and diced fine 2# Wild Gulf Shrimp, peeled and deveined Add all ingredients, except shrimp, to heavy saucepan and simmer over medium heat; stirring occasionally until liquid is reduced and mixture thickens and becomes glossy. Add shrimp and stir to coat evenly with pineapple glaze. Continue stirring until shrimp are done through but not over-cooked (5-10 min depending on size). Remove from heat and serve immediately. Delicious with roasted vegetables and steamed grains like quinoa, kamut or basmati rice.

I have 2 pineapple favorites.... 1 ~ Pineapple Cheese Ball Fresh Pineapple ~ cut in to tiny, bite size pieces Green Pepper ~ chopped Red Onion ~ chopped Cream cheese ~ softened Stir & smooth cream cheese. Stir in pineapple, green pepper & onion. Shape in a ball & roll in chopped nuts if desired. Refrigerate to firm up & serve with crackers. 2 ~ Pineapple Coconut Tuna Salad 1 large can of tuna (or fresh, cooked tuna cut up) 1/2 to 1 cup of fresh pineapple cut into bite size pieces 1/2 cup fresh or unsweetened coconut 1/2 cup to 1 cup of your favorite chopped or shredded, fresh veggies spice it up or leave plain & just add mayo. Serve it on bread, crackers or in a hollowed~out tomato.

MY recipe is simple and wonderful. Peel core and dice 1 whole pineapple. Place diced pineapple in a plastic or galss 1 quart container. Pour in enough vodka (any flavor) to cover diced pineapple. Let rest in refrigerator for at least an hour. You can strain off the vodka and mix in your favorite recipe or blend diced pineapple and vodka. Serve in a chilled martini glass. Nice addition to a light summer menu.

Fresh juicy cold pineapple is hard to beat all by itself, but to step it up a notch add a vanilla sauce made with 1/2 cup plain yogurt, 1/4 cup mayo, 1 tsp. lemon juice, 1 tsp. honey and 1 tsp. vanilla. Salt and pepper to taste. Yummy brunch treat!

A simple fruit salad just in time for spring: 1 pineapple, cut into bite-size chunks 3 medium bananas, sliced into chunks 2 cups strawberries, cut into halves or quarters Gently toss the 3 fruits together and refrigerate for about 10 minutes while the flavors meld a bit. Serve immediately. (If you let it sit for too long, such as overnight, the bananas and strawberries will get kind of mushy.)

Kahlua Pineapple This is the simplest dessert, but always gets rave reviews! You only need 3 ingredients, & I never even bother measuring it! Ingredients: 1/2 Fresh Pineapple Sliced into Rings (approx. 3/4" thick) Butter or Smart Balance (at least a teaspoon for each ring) Kahlua (at least a tablespoon for each ring) Directions: Place a frying pan on medium low heat. Add butter or Smart Balance, and once it is mostly melted add Kahlua. Stir well, and then add pineapple rings. Be sure both sides of the pineapple ring get coated with the sauce, and saute for approximately 3-4 minutes a side. I usually am more generous with the Kahlua and butter to make extra sauce--it's also delicious with vanilla ice cream!

2 tsp kosher salt 1 tsp garlic powder 1 tsp of black pepper 2 tsp Crushed red pepper flakes 2 fresh Green Chile peppers, seeded and chopped 4 medium Chicken breasts or 8 tenders, boneless and skinless ½-cup Fresh orange juice 2-medium Green onions, sliced 2 c Pineapple, cut up, fresh or canned 1 Tbsp packed Brown sugar Nonstick cooking spray cooked rice (optional) Combine in a small bowl seasoned salt, black pepper, garlic powder, crushed red pepper flakes, and green Chile peppers. Rub mixture over chicken. Spray a large skillet with cooking spray. Preheat skillet over medium heat. Add chicken; cook for about 10 minutes or until chicken is tender with no pink. Transfer to a serving platter and keep warm. Add 2 tablespoons of the fresh orange juice and the green onions to the skillet. Cook and stir over medium heat for about 5 minutes or until green onions are tender. In a medium bowl combine remaining fresh orange juice, half of the pineapple, and brown sugar. Add to skillet. Cook and stir over medium heat about 3 minutes or until thickened and bubbly. Remove from heat. Stir in remaining pineapple; spoon over chicken. If desired serve over hot rice. Serves 4

Pineapple Casserole First, Create This Mix: 1/4 cup of plain flour 1/2 cup of sugar per 16oz of pineapple (cut fresh pineapple into chunks) Stick of melted butter Second, layer the mix into a pan. Then top with a half stick of melted butter, sharp cheddar (shredded), and ritz crackers. Third, bake at 350 for 30 minutes. THIS IS DELICIOUS!! A great casserole to take to parties.

Papapinego Drink: 1/2 pinapple peeled and chunked up 1 small mango peeled and pitted and chunked up 1/2 small papaya peeled and pitted chunked up about 1/4 cup water or orange juice Add first three ingriedents in blender and blend for 2-3 minutes adding juice or water until the consistency you like. Pour over crushed ice and serve.

My spicy sweet version of a Cuban sandwhich: Cuban bread (or crusty French bread) grilled pineapple sliced sweet ham grilled jalepenos peperjack cheese(or swiss) store bought sundried tomato spread Assemble the sandwhich: Put spread on both sides of bread then slices of pineapple, then generous amounts of ham, then jalepeneos, then top with cheese, then lay the top slice of bread on top. Next place sandwhich on a hot fry pan. Use another frying pan with some type of heavy weight on top to really press the sandwhich down. Cook 2-3 min on each side until cheese is melted and bread is golden brown.

Tropical Tapioca Pudding: Prepare PEARL TAPIOCA with COCONUT MILK, EGGS, & SUGAR. Top each serving with FRESH PINEAPPLE TIDBITS and garnish with TOASTED COCONUT FLAKES.

Pineapple Pizza with Jalapeño Pepper Ingredients:- 1 frozen pizza pie, 1 cup of fresh pineapple chunks, 3 jalapeno pepper cut in rings, 1 cup whole food pizza sauce, 12 ounce whole food shredded mozzarella cheese, ½ tea spoon olive oil Spread the olive oil on frozen pizza pie. Spread the pizza sauce, sprinkle cheese. Arrange Pineapple chunks and Jalapeno pepper rings on top of the pizza. Bake it for 25 mins at 350 degree temperature or longer depending on the crispness you like. When cheese starts to bubble, pineapple gets little brown and pepper gets wilted take it out. Wait for couple of mins before cutting it into slices. This unique pizza has hot and sweet taste.

Chicken Tikka with Pineapple Ingredients: - 2 pound whole food chicken breast cut in cubes, 1 cup of fresh pineapple chunks, 1 inch piece of grinded ginger, 5 cloves of crushed garlic, ½ cup whole fool sour cream, 2 table spoon of whole food fresh lemon juice, 1 tea spoon salt, 1 tea spoon red pepper, 1 tea spoon dried coriander powder, ¼ tea spoon of powdered cinnamon Marinate chicken pieces overnight with all the above ingredients except for pineapple. In a heavy pan pour 2 table spoon of olive oil. Cook the marinated chicken, discard any leftover marinated juice. Cook for 10 mins; stirring every now and then. Add pineapple chunks. Cook for another 5 mins. Sprinkle fresh coriander leaves and serve it hot.

Honestly, the best summer treat is to slice the pineapple and throw it on the grill. It gets a wonderful char flavor, and the natural sugar carmalizes. Top with a little vanilla bean ice cream and you have the perfect summer dessert!

Pineapple Tea Recipe When you've used the pineapple flesh for one of these other delicious recipes, don't throw away the skin and cores! wash the skins and put them in a pot with water to cover along with the cores, simmer until the skins looks cooked thru, somewhat translucent. I usually prefer organic pineapples for this tea. If the tea is not sweet enough on it's own (depends how sweet the pinapple was) add a small amount of sweetner of your choice. Sometimes I like to add some mint leaves or coriander seeds near the end of simmering. Enjoy another use for that beautiful pinapple you bought!

Creamy Cool Pineapple Pie A great summer treat! 1.3 tablespoons of Cream cheese 2.1 Pie shell 3.3 tbl Cornstarch 4.1 quart of Pineapple, cut in chunks 5.1 cup of Sugar 6.Heavy cream and honey (for whipped topping) After pie shell has cooled, smear the bottom of the shell with the 3 tbl of cream cheese. Take half of the pineapple chunks and press them through a sieve into a mixing bowl. If this doesn’t yield 1.5 cups of liquid, add water. In a medium saucepan – mix pineapple liquid mixture, cornstarch over medium heat stirring constantly until thickened (about 7-8 minutes.) Let cool. Take the other half of the pineapples; stand them up straight in the pie shell, then poor the cooled mixture over the pineapples. Let chill for about 3 hours. If you choose, you may use homemade whipped cream on the top for serving, which is made by whipping 8 oz of heavy cream with honey (to your taste) until fluffy. This truly is a delight!

I like loose recipes you can play around with and make lots of substitutions in, so here we go: Your Favorite Pineapple Sandwich: Fresh sliced pineapple (enough to cover a slice of your favorite bread) 2 Slices of your favorite bread Your favorite deli meat, meat substitute, or leftover meat 2 slices of your favorite cheese (or enough spread or crumbles to cover one slice of bread) Your favorite sauce (as much as you want without making the bread too soggy; unless you're into that ;) ) Layer meat, pineapple, sauce, and cheese on one slice of your favorite bread; top with other slice of your favorite bread and broil until cheese melts. Three suggestions for the variable ingredients: Roast lamb with a curry sauce (Personally, I LOVE pineapple and lamb with curry.) and a creamy cheese (maybe a sheep's milk cheese for symmetry?). Chicken with buffalo sauce and mozzarella (or bleu cheese if you're a fan). Ham with honey mustard and provolone.

I am resubmitting my recipe for the Creamy Cool Pineapple Pie. I realized I had omitted a step. Thanks! Creamy Cool Pineapple Pie A great summer treat! 1.3 tablespoons of Cream cheese 2.1 Pie shell 3.3 tbl Cornstarch 4.1 quart of Pineapple, cut in chunks 5.1 cup of Sugar 6.Heavy cream and honey (for whipped topping) After pie shell has cooled, smear the bottom of the shell with the 3 tbl of cream cheese. Take half of the pineapple chunks and press them through a sieve into a mixing bowl. If this doesn’t yield 1.5 cups of liquid, add water. In a medium saucepan – mix pineapple liquid mixture, cornstarch, and sugar medium heat stirring constantly until thickened (about 7-8 minutes.) Let cool. Take the other half of the pineapples; stand them up straight in the pie shell, then poor the cooled mixture over the pineapples. Let chill for about 3 hours. If you choose, you may use homemade whipped cream on the top for serving, which is made by whipping 8 oz of heavy cream with honey (to your taste) until fluffy. This truly is a delight!

Portabello Pioneapple Burgers Portabello Mushrooms Pineapple, peeled, sliced into rings, remove core 1 cup Soy Sauce with 1 tsp of Sesame Oil added Wasabi Mayo Tomato slices Red Onion sliced thinly Butter Lettuce Whole Wheat Buns Clean Portabello mushrooms. Peel and slice pineapple into rings. Remove core of pineapple. Put mushrooms and pineapple slices in gallon size zip lock bag. Add soy sauce and sesame oil. Close bag and marinate for about 2 hours. Heat BBQ grill. Grill mushrooms and pineapple until soft. Grill the pineapple a bit longer to get a good carmelization on it. Prepare buns with wasabi mayo, tomato slices, red onion and butter lettuce. Serve with extra soy sauce and sesame oil on the side for dipping. Excellent!

Tuna Pineapple Sandwich 1 can tuna, drained 2 tbl Celery, finely diced 2 tbl Green onion, diced 2 tbl fresh Pineapple, diced 1.5 tbl Wasabi Mayo Wheat Bread Combine tuna, celery, green onion, pineapple, and wasabi mayo. Spread on bread.

Ricotta Pineapple Dessert 1 cup ricotta cheese 1 tbl Splenda or 1 tsp Stevia 2 tbl sour cream 2 tbl low sugar Orange Marmalade 1/2 cup chopped fresh Pineapple Cinnamon Combine all and serve in small dessert glasses. Serves 2

Smoothie: My favorite breakfast smoothie is 1 cup fresh pineapple cut in chunks, 1 banana, 2 handfuls of baby spinach and 1 cup of ice, blend in the blender. Delicious, and you get all the fruits and vegetable requirements for the day in one glass!
